Chicken Breasts Pierre Recipe

I made this last night and it was really good.

Ingredients
6 skinless, boneless chicken breast halves ( I used just two but I kept all other ingredients the same . We like a lot of sauce)
1/4 cup flour
1/2 tsp salt
1 pinch black pepper
3 Tblspn butter
1 (14.5 ounce) stewed tomatoes with liquid
1/2 cup water
1 Tblspn brown sugar
2 Tblspn white vinegar
2 Tblspn Worcestershire sauce
1 tsp salt
2 tsp chili powder
1 tsp mustard power
1/2 tsp celery seed
1 clove garlic minced
1/8 tsp hot pepper sauce

Directions
In shallow dish combine flour, 1/2 tsp salt and ground black pepper . ( I added a little garlic powder ). Coat chicken breasts . Melt butter in large skillet over medium heat, brown chicken and remove from skillet . In same skillet combine the tomatoes, water, brown sugar, vinegar and worcestershire sauce. Season with salt, chili powder, mustard , celery seed, garlic and hot pepper sauce. Bring to boil, reduce heat, return chicken to skillet . Cover and simmer approx. 40 min. until chicken is tender and juices run clear . Enjoy ! ( I added two red peppers ( sliced in strips ) I wanted to get rid of to the pan . Mushrooms would work , too.

Pumpkin Ricotta Pie Recipe

Ingredients
2 eggs
1 c. ricotta cheese
2 cups solid pack pumpkin
3/4 cup brown sugar, packed
1/2 teaspoon salt
1 1/2 teaspoon pumpkin pie spice
1 teaspoon vanilla extract
1 9" unbaked pastry shell

Directions
Beat eggs lightly in large bowl. Beat in cheese until smooth. Stir in remaining ingredients until well blended. Pour into pastry shell and bake at 375 degrees for 45 minutes. Cool completely on wire rack. Just before serving, garnish with yogurt and pumpkin seeds or, if you prefer, whipped cream.

Pumpkin Pie Fudge Recipe

Ingredients
3 cups milk
5 cups pumpkin
7 teaspoons pumpkin pie spice
3 cups sugar
dash salt
1/2 cup butter or margarine
1 cup chopped nuts
1 cup marshmallow cream
8 oz white chocolate
1 teaspoon vanilla

Directions
Combine the milk, pumpkin, spice, sugar, salt, butter and nuts in a 5 quart saucepan and bring to a boil, cooking until the mixture reaches the firm ball stage. Then stir in the marshmallow creme, white chocolate and vanilla. Stir until it starts to get thick. Pour into buttered pan; let set.

Pumpkin Pie Coffee Creamer Recipe

Ingredients
4 teaspoon ground cinnamon
2 teaspoon ground ginger
2 teaspoon ground nutmeg
1 teaspoon ground cloves
1 teaspoon allspice (optional)
1 cup non dairy creamer

Directions
Combine well.

Lemon Krispie Cookies Recipe

Ingredients
1 box lemon-flavor cake mix (2 layer)
1 stick butter, melted
1 egg, beaten
1 cup Rice Krispies

Directions
Preheat the oven to 350F. Stir together the dry cake mix, butter and egg in a mixing bowl. Stir in the cereal. Roll the dough into 1 1/2" balls. Place cookies 2" apart on an ungreased baking sheet. Bake 8 to 10 minutes, until edges are golden. Cool on baking sheet for 1 minute before placing on a cooling rack.

Snickers Pie Recipe

Ingredients
12 oz. frozen sugar free yogurt - vanilla or chocolate
1 small box sugar free instant chocolate pudding mix
1/4 c. peanut butter-creamy or crunchy
1 c. Cool Whip
1/3 c. Grape Nuts cereal

Directions
Soften frozen yogurt. Blend rest of ingredients into softened yogurt. The pudding mix is used DRY. Pour into an 8 or 9 in. pie plate-there is no crust-and freeze. 18.5 carbohydrates. Let sit out a few minutes before cutting into serving pieces.
Makes about 30 cookies

Crock Pot Cornbread Dressing Recipe

Ingredients
1 (8 inch) pan cornbread (not Jiffy or sweet cornbread)
8 slices dry white bread
4 eggs
2 c. chicken broth
2 cans cream of chicken soup
1 tsp. sage
1/2 tsp. black pepper
Celery to taste
1 med. onion
2 tbsp. butter

Directions
Mix ingredients except butter. Combine in crock pot. Dot butter on top. Cook 2 hours on High then 4 hours on low.

Cranberry Cornbread Stuffing Recipe

Ingredients
2 c. cranberries, fresh or frozen
1 c. water
1/2 c. sugar
1 lb. sausage meat
8 c. crumbled cornbread
2 lg. red Delicious apples, pared, cored & diced
2 med. size celery stalks, diced (1/2 C.)
1 med. size onion, finely chopped (1/2 c.)
1/4 c. chopped parsley
2 tsp. leaf thyme, crumbled
2 tsp. leaf marjoram, crumbled
1/4 tsp. salt
1/4 tsp. pepper

Directions
Combine cranberries, water and sugar in medium size saucepan. Bring to boil. Lower heat, simmer 10 minutes; drain well. Transfer to large bowl. Saute sausage in medium size skillet, breaking up into small pieces with wooden spoon until lightly browned and no longer pink, about 5 minutes. Drain excess fat. Combine with cranberries in bowl. Add cornbread, apples, celery, onion, parsley, thyme, marjoram, salt and pepper to cranberry sausage mixture. Toss gently. Stuff turkey and roast according to your favorite recipe or spoon stuffing into greased shallow baking dish. Bake, covered in preheated moderate oven for 45 minutes or until heated through. Uncover for the last 10 minutes of baking time for a crusty top.
Makes 10 cups.

Cranberry Orange Jello Salad Recipe

Ingredients
2 cup uncooked cranberries
1 cup boiling water
1 pkg. lemon gelatin
2 small oranges
1 cup sugar

Directions
Wash cranberries. Dry and peel oranges. Place cranberries and 1 orange peel through food chopper. Dice orange pulp and add with the sugar. Dissolve gelatin in boiling water and cool. Combine with cranberry-orange mixture; pour into oiled molds and chill until firm. Unmold on lettuce leaf and serve with mayonnaise.
Makes 6 large servings.

Lemon Orange Carrots Recipe

Ingredients
3 cups pared, sliced carrots, cooked
1/2 cup orange marmalade
2 tbsp fresh lemon juice
2 tbsp butter or margarine

Directions
In medium saucepan, combine orange marmalade, lemon juice and butter. When melted, stir in carrots. Stir gently to coat evenly. Heat through.

Lemon Green Beans Recipe

Ingredients
1 lb. green beans
1/4 cup water
1/4 cup lemon juice
1 Tbs. plus 1 tsp. unsalted butter
1 tsp. lemon zest

Directions
Place beans in a steamer basket over boiling water. Cover saucepan and steam 5-7 minutes or until green beans are tender. Rinse under cold water and drain. Combine water and lemon juice in a heavy nonstick skillet over medium heat. Simmer 2-3 minutes or until reduced by half. Stir in butter. Add green beans and lemon zest. Simmer 3-4 minutes or until green beans are heated throughout. Remove from heat. Add parsley and salt to taste and toss.

Makes 4 Servings
Per serving: calories 73, fat 2.0g, 43% calories from fat, cholesterol 10mg, protein 2.2g, carbohydrates 9.5g, fiber 4.0g, sugar 3.5g, sodium 8mg

Cauliflower With Cheese Sauce Recipe

Ingredients
1 medium cauliflower
2 cups milk
4 tablespoons butter
4 tablespoons flour
1-1/2 cup grated cheese
1/2 teaspoon salt

Directions
Cook the cauliflower upside down in boiling, salted water, until tender, 12-15 mins. Drain. Make a white sauce, by melting butter, and adding flour. Add milk gradually. Cook slowly until thickened, stirring constantly. When thickened, remove from heat, and add grated cheese, and salt. Place the drained cauliflower on a platter, and pour the cheese sauce over it.

Marinated Cauliflower Salad Recipe

Ingredients
1 head cauliflower, divided into flowerets and thinly sliced
1 small onion, thinly sliced
12 small pimiento stuffed olives, sliced
1/3 cup Kraft fat-free Catalina salad dressing
Salt and pepper to taste

Directions
Mix all ingredients, cover and refrigerate at least 1 hour before serving. Stir occasionally.

Makes 8 servings
Calories 33 fat 1g fiber 1g Carbohydrate 6g Cholesterol 0mg Sodium 165mg

Cranberry Chiffon Pie Recipe

Ingredients
8-9 inch Graham Cracker Crust
2 tablespoons cornstarch
2 cups cranberry juice
1 envelope. (1 tbsp.) unflavored gelatin
1/2 teaspoon salt
3 packets (3 grams) Equal Sweetener
3 egg whites
1 cups frozen whipped topping, thawed

Directions
Bake the Graham Cracker Crust and set it aside. Put cornstarch in a small saucepan and dissolve it in a small amount of cranberry juice. Add remaining juice, gelatin and salt. Cook and stir over medium heat until mixture thickens and bubbles. Remove from heat and stir in the Equal. Pour cranberry mixture into a bowl. Chill, stirring frequently, until mixture mounds slightly when dropped from a spoon. Beat egg whites until stiff peaks form. Fold in cranberry mixture then whipped topping. Pour into prepared crust. Refrigerate until firm. Garnish the pie with whipped topping and candied green cherries.

Cranberry Relish Recipe

Ingredients
2 large oranges
4 cups cranberries
2 cups sugar (or 1 1/2 c. honey)
2 apples
1 cups nuts, chopped

Directions
Peel oranges and remove seeds. Wash cranberries. Cut and core apples. Grind fruit and berries. Mix all ingredients. Cover and refrigerate.

Amish Sugar Cream Pie Recipe

Ingredients
1 cup white sugar
1/2 cup flour
2/3 cup brown sugar
1/2 teaspoon salt
1 cup boiling water
1 cup cream
1/8 teaspoon nutmeg
1/2 teaspoon vanilla
unbaked pie shell

Directions
Combine sugar, flour, and salt. Stir in boiling water. Then add cream, nutmeg, and vanilla. Pour mixture into unbaked pie shell. Bake at 425 for 10 minutes, then 350 for 40 minutes
