Just received this from a good friend (who is also an excellent cook) and wanted to share. Meatloaf is one dish that I've never excelled in but this will be on tomorrow's menu.

Really Good Meatloaf Recipe

Ingredients:
1 1/2 lbs ground beef
1 slice bread (broken or chopped finely)
1 egg
1 small vidalia onion or other sweet onion, finely chopped
1 teaspoon table salt
1/4 teaspoon black pepper
4 tablespoons ketchup
1/2-2/3 cup whole milk or 1/2-2/3 cup half-and-half

Sauce
4 tablespoons apple cider vinegar
2 -4 tablespoons dark brown sugar, packed firm ( to taste)
1/2 cup ketchup

Directions:
Meatloaf: Combine meat loaf ingredients and place into a loaf baking dish. Smooth out top.
Sauce: Combine sauce ingredients and pour on top and sides of meatloaf.
Bake at 350°F about 1 hour to 1 hour 15 minutes or until done.

Notes:
1. The addition of 1 or 2 teaspoons of Kitchen Bouquet® makes this recipe very good.
2. Recipe should be"plump" from the addition of the milk or Half & Half. It should NOT be runny.
3. A second batch of sauce served hot is good to serve with the meatloaf.

I like Lasagna--but prefer the ability to portion out stuffed Manicotti that has the same flavor. The individual noodles are also easier than lasagna to place in freezer bags for future meals. Here's one recipe I use after I've made a pot of red Italian meat sauce:

Simple Manicotti Recipe

Ingredients
2 cups Pasta Sauce, divided
1-3/4 cups Ricotta Cheese
1-1/2 cups Shredded Mozzarella Cheese
1/2 cup Grated Parmesan Cheese (or "Kraft" grated)
1 egg, beaten
1/4 cup Basil Pesto Sauce and Spread
12 cooked manicotti shells, rinsed in cold water
Heat oven to 350°F.
Spread 3/4 cup sauce onto bottom of 13x9-inch baking dish.

Directions
Mix cheeses, egg, and pesto until blended; spoon into resealable plastic bag. Use scissors to cut small corner from bottom of bag.

Fill manicotti shells by squeezing cheese mixture into both sides of each shell; place in baking dish.

Top with remaining sauce; cover.
Bake 40 min. or until heated through.

Cinnamon Orange Walnut Muffins Recipe

Ingredients
2-1/4 cups all-purpose flour
3 tbsp orange zest
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/4 tsp salt
1/4 cup butter
1 cup sugar
1 tsp vanilla
2 large eggs
1/2 cup sour cream
1/2 cup orange juice
1 cup walnut pieces

Topping
2 tbsp turbinado sugar
1/2 tsp ground cinnamon

Directions
Preheat oven to 375 degrees. Mix flour, zest, leaveners, cinnamon and salt together in a medium bowl. Cream butter and sugar together. Add vanilla, then eggs, beating after each addition. Beat until light and fluffy. Mix in the sour cream and orange juice. Add dry ingredients to creamed mixture, mixing only until combined. Add nuts. Fill 12 well-greased muffin tins. Mix the turbinado sugar and 1/2 tsp cinnamon in a cup. Sprinkle over muffins. Bake 20-25 minutes or until, done. Remove muffins to a wire rack to cool.

Mississippi Mud Pie Recipe

Ingredients
2 c. sugar
1/2 stick butter
1/2 c. milk
4 tbsp. cocoa
1/2 c. peanut butter
2 c. uncooked quick oats

Directions
Bring sugar, butter, milk, cocoa to a boil and boil 1 minute. Remove from heat, immediately add peanut butter, dissolve. Add uncooked oats and drop by teaspoons onto waxed paper.

Pumpkin Pie Cake Recipe

Ingredients
2 eggs, beaten
1 med. (16 oz.) can pumpkin
1/2 c. sugar
1 1/2 c. milk
1 tsp. cinnamon
1/4 tsp. ginger

Directions
Mix above all together and pour into 9 x 13 inch pan. Sprinkle 1 cake mix on top, yellow or spice. Pour 2 sticks of melted oleo on top and 1 cup chopped nuts. Bake at 350 degrees for 1 hour. Serve with whipped cream.

Old Fashioned Apricot Cream Cheese Bread Recipe

Ingredients
1/3 cup sugar
1 teaspoon grated orange peel
1 tablespoon flour
1/2 cup orange juice
2 eggs
1/2 cup white wine
1 (8 ounce) pkg. cream cheese
1 package apricot nut bread mix

Directions
Generously grease and flour a 13x9 inch pan. Preheat oven to 350 degrees. Combine sugar, flour and orange peel in bowl. Set aside. Combine cream cheese and 1 egg. Beat together with flour mixture; set aside. Combine other egg (slightly beaten) with orange juice and white wine. Stir in bread mix. Mix well. Pour 2/3 batter into prepared pan. Spread cheese mixture over the batter. Then pour remaining batter over cheese mixture. Bake 45 minutes. Cool. Remove from pan.

Apricot Cream Cheese Cookies Recipe

Ingredients
1 c. flour
8 tbsp. butter
4 oz. cream cheese
1 1/3 c. apricot preserves
1 lg. egg white
Sugar, dusting

Ingredients
Mix flour, butter and cheese with pastry blender until crumbly. Form ball. Chill 1 hour. Heat oven to 375 degrees. Roll dough thin and cut 3"x2" rectangles. Spread with preserves. Roll to form 2" cylinders. Pinch ends. Beat egg white until frothy. Brush rolls and dust with sugar. Bake 15 minutes.

Raspberry Bran Muffins Recipe

2 1/2 cups flour
1 3/4 cups sugar
2 teaspoons baking powder
1/2 teaspoons baking soda
1/2 teaspoons salt
2 cups buttermilk
1/2 cup vegetable oil
2 eggs
8 cups bran flakes cereal
1/2 cup raspberry jam

Preheat over to 350F. Line muffin tins with paper cups. Combine first 5 ingredients in bowl. Whisk buttermilk, oil and eggs in large bowl to blend. Add dry ingredients and cereal and stir until just blended. Spoon 1/4 cup batter into each muffin cup. Using small spoon, make well in center of each and fill well with 1 teaspoon jam. Spoon remaining batter over. Bake until done about 25 minutes. Turn out onto rack. Cool slightly. Serve warm or at room temperature.

Apricot Crisp Recipe

Ingredients
2 (26 ounce) jars apricot halves, drained
1 cup flour
1/2 cup sugar
1/3 cup ground almonds
1/2 cup cold butter
1 pinch salt
1 tablespoon flour
2 teaspoons vanilla

Directions
Preheat oven to 375F. Drain apricot halves and set aside. Combine the sugar and flour. Cut butter into small cubes. Add butter to sugar/flour mixture using a mixer or by hand using a pastry blender, blending to a granule like texture. In a food processor or a blender, grind almonds to nearly a fine powder. Add almonds and salt to butter mixture; stir well. In a separate bowl, combine the apricots with a tablespoon of flour and 2 teaspoons of vanilla. Mix until fruit is well coated. Spoon fruit into an 8 inch deep souffle dish or 1 1/2 quart casserole dish and pour crisp topping mixture on top. Pat down firmly. Bake at 375F for approximately 30 minutes or until the top is lightly golden brown.

Orange Pancakes Recipe

Ingredients
1-1/2 cups of pancake mix
1/2 cup nonfat milk or water
1/2 cup fresh squeezed orange juice
4 egg whites
1 teaspoon of orange extract
orange grind if you like
Pam spray

Directions
Mix all ingredients except Pam. Cook on pancake griddle sprayed with Pam, until bubbles form. Flip over and cook until golden brown. Serve with warm maple syrup and orange slices.

Orange Croissants Recipe

Ingredients
10 small croissants
9 ounces orange marmalade
strawberries
Mandarin orange sections
1 1/2 cup cream
3 ounces orange juice
8 eggs

Directions
Cut croissants in half lengthwise and place in bottom of 12 x 10 inch baking dish. Thin marmalade with orange juice and spoon over each bottom half, saving a little to be used as glaze. Replace croissant tops. Beat eggs, cream and almond extract. Pour over top of the croissants. Spoon thinned marmalade over top. Soak overnight. Remove from refrigerator 45 minutes before baking. Bake 25 minutes at 350F. Serve hot. Garnish with mandarin oranges and strawberries.

Light Orange Vinaigrette Recipe

Ingredients
1/4 cup vegetable oil
1/4 cup white wine vinegar
3/4 cup orange juice concentrate
1 teaspoon salt
1/2 teaspoon pepper

Directions
Prepare pasta according to package directions; drain. Cut the chicken into 1 inch cubes. In a large mixing bowl, stir together the pasta, chicken, grapes, cucumber, scallions and half the orange sections. In a small mixing bowl, whisk together all the vinaigrette ingredients. Pour the vinaigrette into the pasta mixture and toss the salad gently. On a large platter, arrange the lettuce leaves. Mound the salad on top of the lettuce and garnish with remaining orange slices.

Orange Balsamic Vinaigrette Recipe

Ingredients
1/4 cup orange juice
2 tablespoons balsamic vinegar
1 tablespoon Dijon style prepared mustard
2 teaspoons honey
1/8 teaspoon cracked black pepper

Directions
In a small jar with a tight fitting cover, combine the orange juice, vinegar, mustard, honey and pepper. Cover and shake well until combined. To store, refrigerate for up to 1 week. Shake well before serving.

Mandarin Orange Cake Recipe

Ingredients
1 box butter cake mix (2 layer)
1/2 cup oil
3 eggs
1 can Mandarin orange slices with juice

Filling
1 medium tub Cool Whip
1 large package vanilla instant pudding
1 large can crushed pineapple with juice

Directions
Mix together cake mix, oil, eggs and mandarin oranges and juice. Make 3 layers. Bake at 375F for 25 minutes. Filling: Beat filling by hand and spread between layers, top and sides of cake. Keep refrigerated.

Creamy Peach Freeze Recipe

Ingredients
1 (1-1/4 ounce) package whipped topping mix
1 16 ounce can sliced peaches, drained

Directions
Prepare whipped topping mix according to package directions. Combine whipped topping and peaches in container of electric blender; process until smooth. Spoon into 4 serving dishes and freeze 2 to 3 hours or until firm. Remove from freezer 5 minutes before serving.
4 servings.

Balsamic Vinaigrette Recipe

Ingredients
2 tablespoon balsamic vinegar
1 tablespoon water
2 teaspoons minced shallots
2 teaspoons olive oil
1/4 teaspoon black pepper
1/8 teaspoon salt

Directions
Mix all in a jar and shake well.

Sweet Cherry Barbecue Sauce Recipe

Ingredients
2 cups pitted and halved fresh sweet cherries
2 tablespoons orange juice
2 tablespoons sherry
1 tablespoon sugar
1 teaspoon grated orange peel
3/4 teaspoon Dijon style mustard
1/4 teaspoon salt
3 drops aromatic bitters, optional
1 tablespoon cold water
2 teaspoons cornstarch

Directions
Combine cherries, orange juice, sugar, orange peel, mustard, salt and bitters. Cover and simmer gently 5 minutes. Combine water and cornstarch; stir into cherry mixture. Cook and stir until thickened and clear. Sauce may be stored up to a week in the refrigerator. Serve with barbecued poultry, ham or assorted specialty sausages.

Cherry Pudding Recipe

Ingredients
1/2 cup sugar
1 cup unsalted flour
1 1/2 teaspoons baking powder
1/4 cup margarine
1 egg
1/2 cup milk
pinch of salt

Directions
Mix all together and beat well. Pour into a buttered 1 1/2 quart casserole. Over the top of this, pour 2 cups sweetened stewed cherries and juice. Bake 45 minutes at 350F. Serve warm.

Cherry Crumb Cake Recipe

Ingredients
2 cups sifted flour
1 cups sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup butter or margarine
1 egg
1 (21 ounce) can of cherry pie filling

Directions
Sift together flour, sugar, baking powder and salt into bowl. Cut in butter until crumbly. Add egg; mix with fork. Press half of crumb mixture into greased 13 x 9 x 2 inch baking pan. Spoon cherry filling over first layer. Top with remaining crumbs. Bake in 350F oven for 30 minutes or until golden brown. Cool in pan on rack. Serve warm with whipped cream or ice cream. Serves 12.

Cherry Upside Down Cake Recipe

Ingredients
7 tablespoons unsalted butter
1 cup packed brown sugar
2 large eggs
1 cup granulated sugar
1/2 cup milk
1 cup all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
2 cups pitted sweet cherries*

Directions
In large oven proof skillet, melt 5 tablespoons butter; add brown sugar and cook until dissolved; remove from heat. Heat oven to 375F. In large bowl, beat eggs and granulated sugar until pale yellow; about 4 minutes. Melt remaining 2 tablespoons butter in milk; set aside. Sift together flour, baking powder and salt. Add flour mixture and warm milk mixture to eggs and sugar, beating on low just until smooth batter forms. Sprinkle cherries in an even layer over brown sugar in pan; pour batter over cherries and bake 40 minutes or until cake tester inserted in center comes out clean. Immediately invert cake onto large platter; serve warm.
Serves 8.
