Butter Basted Potatoes Recipe

Baking potatoes, 1 per person
Paprika, to taste
Melted butter

Heat oven to 350 degrees.
Scrub potatoes, cut them partway through into slices 1/8 inch thick. Leave the bottoms intact. Chill potatoes in ice water for about 1 hour. Drain, then let dry on paper towels.

Add paprika to melted butter and roll each potato (twice) in the mixture. Transfer to a baking dish and pour remaining paprika butter over top. Roast potatoes at 350 until pierced easily with a knife, 1 hour and 20 minutes, basting every 30 minutes.

Cauliflower Salad Recipe

1 cup fresh cauliflower
1/4 cup thinly sliced red onion, quartered
2 tbsp. sliced stuffed green olives
2 tbsp. olive oil
1 tbsp. tarragon vinegar
1/4 tsp. sugar
1/8 tsp. salt
1 dash paprika
2 cups torn leaf lettuce
2 tbsp. crumbled blue cheese

In a small bowl, combine the cauliflower, onion and olives. In another bowl, whisk the oil, vinegar, sugar, salt and paprika. Drizzle over cauliflower mixture and toss to coat. Refrigerate for 1 hour or until chilled. Just before serving, add the lettuce and blue cheese; toss.

Crock Pot Butter Beans Recipe

1 pound dry limas
1 pound smoked sausage
1 bunch green onions
1/2 teaspoon garlic powder
4 beef bouillon cubes
3/4 teaspoons Tabasco sauce
6 cups water

Wash limas and put them in a slow cooker. Add 6 cups water. Slice smoked sausage into round pieces and add to limas. Chop green onions and add to mixture. Now add remaining ingredients and mix. Cover and cook in slow cooker on high for 8 to 10 hours.

Fresh Green Beans with Almonds Recipe

1 pound fresh green beans
1 cup water
1/2 envelope onion soup mix
3 tablespoons butter
1/3 cup slivered almonds, toasted
3 tablespoons grated Parmesan cheese
1/2 teaspoon paprika

Wash beans; remove ends. Cut beans in 1-inch pieces. In medium saucepan combine the beans, water and onion soup mix. Bring to boiling; simmer until beans are tender, about 15 to 20 minutes. Drain beans. Turn into serving dish; stir in butter until melted. Combine toasted almonds, Parmesan cheese and paprika; sprinkle over the green beans.
Makes 6 to 8 servings.

Spaghetti Casserole Recipe

1 lb. ground beef
1 tbsp. Worcestershire sauce
1 tbsp. Tabasco
1 tbsp. onion salt
1 tbsp. garlic salt
Small can tomato juice
2 c. cooked spaghetti

Brown ground meat; add next 4 ingredients and stir. Add tomato juice; simmer for about 5 minutes. Add cooked spaghetti and simmer for 10 minutes more. Serve with toasted garlic bread. You may decrease the onion and garlic salt but it really is good if you don't. I also make a salad to go with this.

Hambuger Soup Recipe

1 pound ground chuck
5 cups boiling water
2 packages dry onion soup mix
1 (16-ounce) can tomatoes, or 2 (8-ounce) cans tomato sauce
1 (1-pound) can mixed vegetables
1 tablespoon parsley flakes
1/2 cup uncooked shell macaroni

Crumble meat as it is into pot of boiling water. When all the meat is in the pot, continue to boil, skimming off fat as it cooks, for about 5 minutes. Add remaining ingredients except macaroni. Lower heat and simmer, covered, for about 1 hour. Bring back to a [full] boil; add macaroni. Cook for 15 minutes.
Servings: 6.

Susie's Homemade Chicken Noodle Soup Recipe

1 whole chicken, about 3 to 4 lbs.
chicken broth, enough to cover chicken

1 to 2 stalks of celery chopped
1 large carrot, chunky
1 medium to large onion, chopped
1, 12 to 16 oz., pkg. noodles
salt and pepper to taste

The night before put the cleaned chicken and chicken broth with celery, carrot and onion in the pan. Cook this for at least 2 hours and then put it in the refrigerator overnight. The next day skim the top of this mixture to get most of the fat off. Then take the chicken out of the pot and debone and cut up the meat returning it to the pot. Then when the soup is warm then add the noodles and cook until hot and noodles are done.

Chicken Tortilla Soup Recipe

4 boneless, skinless chicken breast halves, cubed
1 small onion, chopped
1 tbsp olive oil
1 can (49-1/2 oz) chicken broth
1 can (15 oz) diced tomatoes
1 can (4 oz) chopped green chiles, drained
1/4 cup parsley
1/2 tsp red pepper flakes
1/2 tsp chili powder
1/2 tsp ground cumin
Tortilla chips
Shredded cheddar cheese

Sauté chicken and onion in olive oil until no longer pink. Add chicken broth, chiles, tomatoes and seasonings. Bring to a boil. Simmer 30 minutes. Crumble chips in the bottom of soup bowls. Ladle soup over chips. Sprinkle with cheese.

Tomato Florentine Soup Recipe

3-1/2 C chicken broth
1 (14oz.) Can stewed tomatoes, sliced (I broke them up a bit as well)
12 oz. V-8 juice
1 can tomato soup
2 t sugar
1 10 oz. Package frozen spinach thawed and squeezed dry
Dash of ground nutmeg
Salt and pepper to taste

Combine all ingredients, blending well. Cook until spinach is tender. If you decide to make it, you could decorate with croutons, a splash of parmesan - whatever Serves 6

I didn't add salt and pepper or any other seasoning - but you could. I also doubled the recipe because we DO like soup here.---

Bean Soup Recipe

1 lb. navy beans
2 qts. Water
1 meaty ham shank
1 c. chopped onion
1 c. chopped celery
1/4 tsp. pepper
1 tsp. nutmeg
1 tsp. oregano leaves
1 tsp. basil leaves
1 tsp. salt

Soak beans overnight. Combine beans, water and ham shank in large soup pot. Simmer, covered, for 1 1/2 hours. Remove 1 cup of beans; mash with fork and return beans to pot. Remove ham shank; trim meat from bone (bite size pieces) and return meat to pot. Add remaining ingredients. Simmer an additional 30 to 45 minutes until beans are tender and soup has thickened. Serve with baking powder biscuits.

Potato Soup Recipe

2 lbs. ham, cut up into bite-size pieces or ham bone
1 c. diced celery
2 c. milk
Salt & pepper
4 to 6 potatoes, diced

Simmer ham or soup bone with celery in 4 cups water. Add potatoes and cook until tender. When done, add milk and season to taste.
Serves: 6
