Easy Apple Turnovers Recipe

Ingredients
4 medium apples, peeled and chop
2 Tbsp butter
1/2 c packed brown sugar
1 tsp cinnamon
2 tsp cornstarch
1 sheet frozen puff pastry, thawed
Egg wash (1 egg beaten with 1 tsp water)

Directions
1.Heat oven to 400°F. Line cookie sheet with cooking parchment paper.
2. In 2-quart saucepan, heat apples, butter, brown sugar, cinnamon and cornstarch to boiling over medium-high heat. Reduce heat; simmer about 5 min or until thickened and apples are tender. Set aside to cool slightly.
3. Sprinkle work surface lightly with flour. Roll out thawed puff pastry into 15-inch square. Cut into 4 smaller squares.
4. Brush each square with egg wash; spoon apple mixture onto center of each. Fold each in half diagonally to form a triangle; press edges together to seal. Use back of fork to crimp edges. Transfer to cookie sheet; brush with egg wash. Use sharp knife to cut a few vents into each turnover.
5. Bake 25 to 30 min or until golden. Then let then cool completely. From: Betty Crocker

Pumpkin Cheese Spice Bread Recipe
makes 3 mini loafs

For the Cheese Batter:
8 oz cream cheese, room temperature
1 large egg, room temperature, lightly beaten
¼ c powdered sugar
½ tsp pure vanilla extract
For the Pumpkin Spice Batter:
¾ c brown sugar, lightly packed
2 large eggs
¾ c pure pumpkin puree (homemade or canned is fine; not pumpkin pie filling)
2 tbsp coconut or canola oil
1 tsp pure vanilla extract
1¼ c all-purpose flour
1¼ tsp baking powder
¼ tsp baking soda
¼ tsp salt
¾ tsp ground cinnamon
½ tsp nutmeg
¼ tsp ground ginger
1/8 tsp ground cloves
Butter, to grease the pans

Instructions
Preheat oven to 350F; lightly grease 3 mini loaf pans with butter.

For the cheese batter, use a handheld electric mixer to beat together all ingredients in a medium bowl until smooth and creamy.

For the pumpkin spice batter, whisk together the brown sugar and eggs in a medium bowl until light and fluffy, then stir in the pumpkin, canola oil, and vanilla. In a separate bowl, whisk or sift together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves. Gradually stir the dry ingredients into the wet, being careful not to over-mix.
Divide the pumpkin batter between the 3 loaf pans, then pour the cheese batter on top. Bake until golden around the edges, about 35 to 40 min, or until a toothpick inserted inside comes out clean or with just a couple crumbs.Cool 10 min in the pans, then remove from the pans and transfer to a wire rack to finish cooling.

Homemade Teriyaki Sauce Recipe

Ingredients
Makes 3/4 cup sauce
1/4 c soy sauce
1/4 c mirin
1/4 c sake
2 Tbsp sugar
2 tsp cornstarch
2 Tbsp water

Directions
Combine the soy sauce, mirin, sake, and sugar in a saucepan and bring the mixture to a boil over medium-high heat.In a small bowl, mix together the cornstarch and the water, then whisk this slurry into the sauce. Turn the heat to medium, and reduce the sauce until it's slightly thick, 2 to 3 min (or longer if you want a thicker sauce). Taste, then adjust with soy sauce and sugar if needed. The sauce will keep for up to 2 weeks in the refrigerator.

French Onion Pie Stew Recipe

Ingredients
1/4 cup butter
2 lg yellow onions, sliced
1 pkg mushrooms
1 Tbsp veg or beef bouillon, such as Better Than Bouillon
1 Tbsp Worcestershire sauce
1 tsp sugar
2 - 2 1/2 lbs chuck roast
Salt and pepper, to taste

For pie crust crackers:
2 1/4 c flour
1 tsp salt
dash of cayenne pepper (optional)
2 Tbsp butter
6 oz gruyere or swiss cheese, shredded
1 c ice water

Directions:
Coat slow cooker with butter. Layer sliced onions and mushrooms and top with remaining butter, bouillon, pepper, Worcestershire, and sugar. Add meat, salt and pepper the top of the meat, then cover. Cook on low for 8-12 hrs, or until meat becomes fork tender and onions are completely caramelized and translucent. (For me, it took 9 hrs). Once meat is fork tender, carefully transfer it to a rimmed cutting board or surface and shred it with a fork and transfer it back to the slow cooker. Stir and salt and pepper to taste. Change slow cooker setting to "warm" until ready to serve.
About 2 hrs before soup is ready, make the cheese pie crust crackers. In a food processor, pulse flour and salt. Pulse in butter and shredded gruyere. Pulse in ice water 1 Tbsp at a time, until dough appears shaggy. (For me, it took 10 Tbsp.) Use a rubber spatula to help transfer the dough to a flat, floured surface. Knead a few times until dough comes together. Divide dough into two parts using a knife or dough cutter. Form two flat disks. Wrap in plastic wrap and refrigerate for at least 20-30 minutes.
After refrigeration, preheat oven to 375°. Roll out dough to 1/4-inch thick. Prick the dough with a fork to prevent it from bubbling up as it bakes. Transfer to a baking sheet lined with parchment paper. Bake for 20-25 min, or until dough turns golden brown. Allow to cool before breaking up into crackers.
Serve soup out of slow cooker with crackers on the side.

Hi Nancy, furkids, and Landers,
In the October 15th newsletter, Sherry in Indiana sent in a recipe for Chewy Brownies. The ingredients listed butter but I wanted to make sure it was 1/2 cup and not two cups. Also, 2 cups of chocolate chips, semisweet, are listed, but nothing in the text says what to do with them. Are they mixed in or put on top or???. Thanks for clarification.

Sauteed Vegetables Recipe

Ingredients
2 tb Oil
4 md Squash, summer
4 Onions, green
1 Bell peppers
1 md Tomatoes
1 ts Salt, garlic
1/2 ts Chili powder
1 ts Sugar

Directions
Heat oil in large skillet. Wash, slice, and add squash. Thinly slice green onions and bell pepper and add. Cook until tender, about 15-20 minutes.

Coarsely chop tomato and add to skillet with salt, chili powder, and sugar. Cook a few more minutes, just until tomatoes are soft. Serve over hot cooked rice.

Southern Style Browned Okra Recipe

Ingredients
3 lb Cut okra
1 lg Onion; chopped
1 lg Tomato; chopped
1 ts Lemon juice
1 ts Salt
1/2 ts Garlic powder
3 tb Vegetable shortening

Directions
Place finely cut okra in shortening in heavy pot or skillet. Brown, stirring frequently to prevent sticking. Add lemon juice (this prevents roping) and onion. Continue cooking & stirring until mixture has cooked down & is brown. Add tomato, salt & garlic powder. Place cover on pot & steam for 10 minutes. Okra will stick to pot & form a crust. Keep lifting & turning with spatula as it browns.
6-8 servings.

Baked Halibut with Stewed Tomatoes Recipe

Ingredients
1 tb Butter
2 Onions, sliced
1-1/2 c Canned plum tomatoes (including juice)
1/2 ts Each salt and pepper
1-1/2 lb Halibut steaks
1 tb Chopped fresh basil or about
1 tsp. dried

Directions
In heavy saucepan, melt butter over medium heat; cook onions, stirring occasionally, for about 10 minutes or just until beginning to brown. Stir in tomatoes, breaking up with fork. Sprinkle with half of the salt and pepper; cook for about 3 minutes or until slightly thickened.

Meanwhile, cut halibut into 6 or 8 pieces; remove bones. Sprinkle with remaining salt and pepper; place in greased 13 x 9 inch baking dish. Spoon tomato sauce over top; sprinkle with basil. Bake in 450?F oven for 10 to 15 minutes or until fish flakes easily when tested with fork.
Makes 6 servings.

Tomato Lime Salad Recipe

Ingredients
4 lg Tomatoes, sliced
1 tb Lime juice
2 tb Extra-virgin olive oil
1/4 ts Cumin seeds
1/4 ts Fennel seeds
1 Dried hot chili pod
2 tb Cilantro, chopped
Salt & pepper

Directions
Arrange tomato slices on a platter. Sprinkle with lime juice. Warm oil in a small pot over moderate heat. Add cumin, fennel & chili pod, cook for 30 seconds. Remove from heat, discard pod & cool. Whisk in the cilantro; spoon seasoned oil over tomatoes. Season with salt & pepper & serve. If it sits, the flavour will intensify.
Makes 4 Servingas

Beer Batter Onion Rings Recipe

Ingredients
1-1/2 c all purpose Flour
1 ts Salt
1-1/2 c Beer
3 lg Onions; in 1/2" slices
Hot oil for frying

Directions
Combine flour and salt; stir in beer and beat until smooth. Chill for 3 hours. Separate onions into rings, dip in batter and fry in oil until golden brown on both sides. Sprinkle with salt. Keep warm in 200 oven.

Note: This batter is also very good used on banana peppers. Slice peppers in half and remove seeds. Dip in batter and fry.

Fried Green Tomatoes and Cucumber Slices Recipe

Ingredients
2 lg Green tomatoes; sliced 1/2 " thick
1 lg cucumber; peeled
Evaporated milk as needed
Quick cooking rolled oats
Oil as needed

Directions
Slice the green tomatoes about 1/2" thick. Peel 1 large yellow cucumber, slice and remove seeds. Season. Dip slices in evaporated milk, then in the oats. (Rub oats between your hands to make them fine.) Fry slowly in hot oil until brown and tender.

Grilled Yellow Squash Recipe

Ingredients
3 tb Olive oil
1 tb Red wine vinegar
4 Medium size yellow squash
Salt/crse grnd black pepper

Directions
Slice squash lengthwise into 1/4 inch slices. Dip squash in oil and vinegar; season with salt and generously with pepper; grill 5 to 7 minutes, covered.

Hi Nancy and 'Landers:
Seeing Lisa's refrigerator pickles reminded me of the sweet sour pickles I've made for years and haven't made them for a long time due to hubby's diet and diabetes but I think I'll
make them again and hide them! I hope you like them as much as we do.

Sweet Sour Pickles Recipe

Ingredients
1 qt. Kosher dill pickles
2 cups sugar
1/2 cup water
1/4 cup vinegar

Directions
Combine sugar, water and vinegar in saucepan, bring to a boil and boil 2 min. Let cool. Drain liquid from pickles and discard. Slice pickles into chunks and put back in the jar. Pour brine over pickles and seal. Turn jar upside down overnite. Then refrigerate the next day. These turn out xtra crispy and good.

Cider Pumpkin Bread Recipe

Ingredients
3-1/2 c. flour
2 tsp. baking soda
3 tsp. cinnamon
1/2 tsp. ginger
3 c. sugar
1 tsp. salt

Stir together. Make a well in center and add, in order:
1 c. vegetable oil
4 whole eggs
1 1/2 c. canned pumpkin
2/3 c. apple cider
1/2 c. thick applesauce

Mix everything until smooth. Pour into greased and flour pan. Makes two 8 1/2 x 1 1/2 x 2 1/2 loaves. Can also be baked in one-pound coffee cans. If baked in can, fill 2/3 full. Makes 3 baked 1 hour at 350 degrees.

Bread Pudding with Pumpkin Casserole Recipe

Ingredients
4 slices whole-wheat bread
1/2 cup milk
1/2 cup orange juice
1/4 cup apple juice concentrate
2 eggs
1 banana, sliced
2 teaspoons cinnamon
1 cup cooked pumpkin
Dash of salt

Directions
Dice bread slices and crumble them in a blender. Place the crumbs in square baking dish. Blend together milk, orange juice and apple juice concentrate.

Add eggs, banana slices, cinnamon, pumpkin and salt and blend again.

Add the mixture to the bread crumbs. Stir together. Bake at 350 degrees F for 50 minutes.
Serve slightly warm.
Makes 8 servings.
