Nancy, in reply to Vivien's comment about the cakes, checked with Susan and she couldn't remember how her grandmother made the cakes. It's been a lot of years and she just remembered that they were wonderful and they were one of the best parts to going to grandma's house.

Chocolate Chess Pie Recipe

3 eggs, whipped lightly
1-3/4 cups sugar
1 tablespoon flour
1 tablespoon corn meal
1/4 cup cocoa powder
1 stick margarine, melted
1 teaspoon vanilla
1/2 cup milk
1 unbaked 9-inch pie crust, optional

Combine all filling ingredients and pour into pie shell. Bake at 350 degrees for 45 minutes. Serves 8. This filling is equally as good baked without the pie shell.

Strawberry Daiquiri Pie Recipe

1 can frozen strawberry daiquiri drink mix, defrosted -12 oz.
2 cans Eagle Brand condensed milk
2 sm. Cool Whip, defrosted OR 1 pint whipping cream whipped
2 graham cracker shells

Stir the daiquiri mix and Eagle Brand milk together, fold in Cool Whip or whipped cream. Pile into shells, freeze until firm enough to cover on top then cover and freeze overnight or several hours. This could also be made in a 9 x 13 pan. Garnish with a dollop of additional whipped cream and a fresh strawberry. Variation: use lemonade or limeade, or frozen margarita mix instead of the daiquiri mix.

Impossible Apricot Pie Recipe
Makes it's own crust

1/2 cup Bisquick(r) Original baking mix
1 cup evaporated milk
1/2 cup sugar
2 tablespoons margarine, butter or spread
1 teaspoon vanilla
2 eggs
1 can (8 1/4 ounces) apricot halves, drained and mashed
1/4 cup apricot preserves

Heat oven to 350°. Grease 9-inch pie plate. Stir together all ingredients except preserves until blended. Pour into pie plate. Bake 35 to 40 minutes or until knife inserted in center comes out clean. Cool completely. Heat preserves over low heat until melted; spread over pie. Cool. Garnish with sweetened whipped cream if desired. Cover and refrigerate any remaining pie. If using spread, use only stick that has more than 65% vegetable oil. High Altitude (3500 to 6500 ft): No changes.

Impossible Pumpkin Pie Recipe
Makes it's own crust

3/4 c. sugar
1/2 c. Bisquick
2 tbsp. butter
1 (13 oz.) can evaporated milk
2 eggs
1 can (16 oz.) pumpkin
2 1/2 tsp. pumpkin pie spice
2 tsp. vanilla

Heat oven to 350 degrees. Grease pie plate, 9 x 1-1/4 or 10 x 1 1/2 inches. Beat all ingredients until smooth one minutes in blender on high or two minutes with hand beater. Pour into plate. Bake until knife inserted in center comes out clean, 50 to 55 minutes.

Impossible Pecan Pie Recipe
Makes its own crust

1-1/2 cups chopped pecans
3/4 cup packed brown sugar
1/2 cup Bisquick(r) Original baking mix
1/4 cup margarine or butter or,* softened
3/4 cup milk
3/4 cup light or dark corn syrup
1 1/2 teaspoons vanilla
4 eggs

Heat oven to 350°. Grease 9-inch pie plate. Sprinkle pecans in pie plate. Beat remaining ingredients with fork until blended. Pour into pie plate. Bake 45 to 50 minutes or until golden brown and knife inserted in center comes out clean. Let stand 5 minutes before cutting. Refrigerate any remaining pie. *If using spread, use only stick that has more than 65% vegetable

Millionaire Pie Recipe

1 (15 oz.) can crush pineapple, strained
1/4 c. lemon juice
1 lg. container Cool Whip
1 c. chopped pecans (save some for garnish)
2 graham cracker pie shells

Mix all ingredients together. Chill in pie shells for 2 hours. Garnish with chopped pecans.

No Sugar Pecan Pie Recipe

3 eggs
5 teaspoons sugar substitute for baking
1 cup sugar free breakfast syrup
1/3 cup butter, melted
1 cup pecan halves
Pie dough for a single 9-inch crust

Preheat oven to 350 degrees F. Mix the eggs with the sugar substitute. Stir in the breakfast syrup and the melted butter. Stir in the pecan halves. Line a 9-inch pie pan with the pie dough. Pour in the pecan pie filling mixture. Bake for 25 minutes with edges covered with foil. Remove foil from the edges and bake for another 25 minutes or until you can insert a knife and have it come out clean. Cool and cut into 8 pieces to serve

Note: Even tho this recipe doesnt say to do so, I suggest you try baking the crust a little before adding the filling and baking. The bottom crust was a little soggy when my hubby made it, but delicious just the same.

Pecan Pudding Pie Recipe

1 large pkg. vanilla pudding (not instant)
1 cup light or dark corn syrup
3/4 cup evaporated milk (not Eagle Brand)
1egg, slightly beaten

1 cup chopped pecans
1 9-in. unbaked pie shell
Whipped Cream

Stir pudding mix into syrup. Mix till well blended. Stir in evaporated milk and egg. Mix in pecans. Pour into pie shell. Bake for 45min. or till top is firm and just begins to crack. Cool 3 hours and serve with whipped cream or ice cream.

Reduced Calorie Pecan Cream Pie Recipe

1/2 package refrigerated pie crusts
1 sm package vanilla sugar-free cook and serve pudding mix
1 C sugar-free maple syrup
3/4 C. fat-free evaporated milk
1 egg, lightly beaten
1 C. pecan halves, chopped

Place unbaked pie crust in a 9-in pie plate; crimp edges, and set aside. Beat pudding mix and syrup at medium speed of an electric miser until smooth and creamy. Stir in milk, egg, and nuts. Pour pudding mixture into unbaked pie crust. Bake at 375 degrees for 30 minutes or until set.
Yield: 8 servings

Reduced Calorie Creamsicle Pie Recipe

1 ( z.) fat-free cream cheese
1 (16 oz.) Cool Whip®, thawed
1 cup orange juice
1 (4-serving-size) sugar-free vanilla instant pudding
1 (4-serving-size) sugar-free orange Jello®
2 reduced fat graham cracker crusts

Soften cream cheese, mix with thawed Cool Whip; blend till creamy; add orange juice and blend with mixer till real creamy. Sprinkle pudding in , blending well; add orange Jello, mix till well blended. Divide into two pie crusts; chill several hours before serving. Exchange for diabetics: 1 1/2 bread/starch, 1 lean meat, 1/2 fat

Oma's Southern Pecan Pie Recipe

3 eggs
1 c. sugar
1 c. light corn syrup
1 tsp. vanilla
1/4 tsp. salt
2 tbsp. melted butter or margarine
1 c. broken pecan meats
1 unbaked 9 inch pastry shell

Beat eggs slightly; add sugar and beat well. Add syrup, flavoring, salt and melted butter or margarine. Spread pecans over bottom of pastry shell and pour egg mixture over them. Bake in moderate oven, 350 degrees, for 45 minutes or until done.

Reduced Calorie Millionaire Pie Recipe

1 lg. package sugar-free instant vanilla pudding mix
16 oz. low fat or fat free yogurt or sour cream
1 flat can-8 oz.- crushed pineapple-use juice and fruit
1 small carton Cool Whip-there is now a sugar free version
1/2 c. chopped pecans
1-9 in. baked pie shell

Mix DRY pudding mix and sour cream (or yogurt)-this will be stiff and lumpy. Add crushed pineapple and mix well. Spread in cooled pie crust shell. Mix pecans in Cool Whip and spread on top of pie. Chill 2-3 hours before serving.

Chocolate Custard Pie Recipe

1 cup sweet milk
3 Tbsp. sweet butter
1/2 cup sugar
1 square unsweetened baking chocolate
2 egg yolks, well beaten
1 Tbsp. cornstarch dissolved in 2 Tbsp. water
pre-baked pie crust
2 egg whites
2 Tbsp. sugar

Place in a pan to boil, one cup of sweet milk, butter, sugar, unsweetened chocolate. Stir into this the yolks of 2 eggs well beaten and one tablespoon of cornstarch dissolved in a little water. Cook until thick, stirring constantly to keep from scorching. Fill the baked crust and cover with a meringue made of the whites of 2 eggs well beaten, to which has been added 2 tablespoons of sugar. Place in the 325 degree oven and bake a light brown. Yield - makes 1-9" pie

Cherry Pie Recipe

1 baked pie shell
1 c. sugar
1/4 c. cornstarch
1/8 tsp. salt
2 (16 oz.) cans pitted tart red cherries (water pack), drained
1/2 tsp. almond extract
1/3 c. sliced almonds

Bake pie shell. Set aside. Blend sugar, cornstarch and salt in medium bowl. Stir in cherries. Microwave at High (100%) until mixture is translucent, 8 to 11 minutes, stirring once or twice during cooking. Stir in almond extract. Pour into pie shell. Sprinkle with almonds. Makes 9" pie.

Custard Pie Recipe

5 eggs, beaten
3 1/2 c. milk
1/3 c. Sugar Twin
Dash of nutmeg
1 tsp. vanilla
9-inch unbaked pie shell

Beat eggs. Add milk, Sugar Twin, dash of nutmeg, and vanilla. Pour into unbaked pie shell. Sprinkle a little nutmeg on top. Bake at 450 degrees for 15 minutes. Turn temperature to 400 degrees and bake 30 minutes longer until knife inserted in middle comes out clean.

Brown Sugar Cookies Recipe

1 C. brown sugar
1 C. white sugar
2 sticks of butter softened
2 1/2 C. flour
1 tsp. salt
2 eggs
1 tsp. soda

Cream sugars, butter & eggs together. Mix dry ingreds. add to creamed mix. refrigerate for at least 1 hr. Make into 1 1/2 inch balls roll in additional white sugar. place on greased baking pans, bake @ 350 for 8-10 mins. Recipe calls to flatten this cookie slightly before baking, I prefer not to. I hope you enjoy this as much as we do!!!

Cashew Cookies Recipe

2 cups margarine
2 cups packed brown sugar
2 cups white sugar
2 cups smooth cashew butter
3 large eggs
2-2/3 teaspoons vanilla
4-2/3 cups flour
1/4 teaspoon salt
1 1/3 teaspoons baking soda
1 cup sugar, for rolling cookies

Preheat oven to 350°. In a large bowl beat together the margarine, brown sugar and 2 cups sugar until creamy. Add cashew butter, eggs and vanilla beating until well blended. Beat in flour, salt and baking soda. Do not over beat. Shape dough into walnut-sized balls. Roll balls in remaining sugar. Place 2 1/2-inches apart on an ungreased cookie sheet. Bake for 8 minutes. The outsides should be set, the centers still soft. around 5 dozen

Special K Cookies Recipe

1/2 stick margarine
3/4 c. sugar
3/4 c. white Karo
1 c. peanut butter
4 c. Special K cereal

Boil first 3 ingredients for 1-1/2 to 2 minutes. Then add peanut butter and cereal. Drop on wax paper by teaspoon.

Eggplant Enchiladas Recipe

4 Corn tortillas
1/2 Cup Salsa sauce
1 Teaspoon Olive oil
1/3 Cup Thinly sliced onions
1 Garlic clove, sliced
1/2 Cup Cubed eggplant
1/4 Cup Grated zucchini
1 Tablespoon Sherry, optional
1/4 Can Diced green chilies
2 Tablespoons Minced cilantro

Place tortillas in shallow pan. Spread salsa over them to soften them. Let sit for 5 minutes. Turn tortiallas over & coat the other side. While the tortillas are softening, heat oil in a skillet & saute onion for 3 minutes, stirring frequently. Add garlic, eggplant, zucchini & sherry if using. Cook, stirring often, for 5 minutes or so, till eggplant begins to stick. Remove from heat & stir in chilies. Pre-heat oven to 400F. Lightly oil a baking tin. Remove each tortilla from the sauce & fill with one quarter of the sauteed vegetables. Roll up tortillas & place seam side down in baking tin. Top with the rest of the sauce & cilantro. Bake for 15 minutes, until evenly browned.

Eggplant Fritters Recipe

Peel and slice one eggplant. Steam until tender and drain. Mash and beat until smooth.

1 beaten egg
3 tablespoons flour
1/2 teaspoon salt
1/2 teaspoon baking powder.

Form into patties and fry in deep, hot fat until golden brown.

Eggplant Salad with Lemon Dressing Recipe

2 cloves crushed garlic
6 tbsp. olive oil
Juice of 2 lemons

Combine all ingredients and mix well.
Salt, 1 eggplant, peeled and sliced in 1/2 inch slices
4 Roma tomatoes, chopped
1 bunch green onions, finely chopped
1 c. finely chopped parsley
Salt and pepper (optional)
Romaine lettuce

Salt eggplant and place on paper towel in glass pie plate. Cover tightly and microwave on high 3 minutes. Rinse eggplant, dry thoroughly and chop fine. Mix with tomatoes, onions and parsley. Add dressing and toss. Add salt and pepper if desired. Serve on crisp Romaine.
Makes 8-12 servings.

Roasted Eggplant and Pepper Salad Recipe

1 med. eggplant
1 red bell pepper
1 yellow bell pepper
1 bunch scallions
1/4 c. olive oil
Juice of 2 lemons
1 clove garlic, crushed

Slice the eggplant crosswise into 1/2-inch thick slices. For marinade mix the olive oil, lemon juice, and garlic and stir well. Preheat grill to high. Place peppers directly on grill. Brush one side of eggplant slices with marinade and place on grill. Brush scallions with marinade and place them on grill. (If you have a top "warming" section of grill, these will do nicely. If not, place them around the outside, away from the most intense heat.) After 5 minutes, brush the upper side of the eggplant slices with marinade and turn. Cook them on the other side for about 3 minutes. They should be crispy on the outside, but soft on the inside. Leave the peppers on the flame until the skin turns black and bubbles up, turning to cook all sides. Watch the scallions closely. They will cook in about 2-3 minutes. The green parts should be wilted, and the white parts soft. They will be the first things off the grill. When all vegetables have been cooked, rinse and skin the peppers. Seed and core them, and slice into 1/2 to 1-inch strips. Cut the eggplant slices into quarters and the scallions into approximately 3-inch long pieces. Place the vegetables in a bowl; pour remaining marinade over top and add the juice from the second lemon. Can be served warm or at room temperature.

Green Tomato Soup Recipe

3 cups green tomatoes, peeled & chopped fine
1 onion, chopped
1/4 teaspoon cinnamon
1/8 teaspoon cloves; ground
1 teaspoon sugar
1/4 teaspoon pepper
2 cups water
1/4 teaspoon baking soda
3 tablespoons butter
3 tablespoons flour
4 cups milk

Place in the saucepan; the tomatoes, onion, cinnamon, ground cloves, sugar, pepper and water. Bring to a boil and boil for 30 minutes. Add the soda. Melt the butter, add the flour. Mix and add the milk. Cook until creamy, stirring constantly. Add green tomatoes to the cream. Mix thoroughly. Salt to taste and serve.
Makes 4 Servings
