I am new to this group. I love the recipes. Here are some of my favorite salmon recipes.

Barbecued Salmon Recipe

3 T melted butter
1 T lemon juice
1 T white wine vinegar
1/4 tsp. grated lemon peel
1/4 tsp. garlic salt
1/4 tsp. salt
4 (6-oz.) salmon steaks

Combine the butter, lemon juice, white wine vinegar, lemon peel. garlic salt and salt; stir thoroughly. Generously brush both sides of the salmon steaks with mixture. Grill on a well-oiled grill over direct High heat for 6 to 8 minutes per side depending on the thickness of your steaks. Baste frequently. Turn once, brushing with sauce. Steaks should flake easily when tested with fork.

Baked Salmon with Veggies Recipe

1/2 c. green onions, minced
1 - 8 oz. can mushrooms, drained and chopped
2 medium carrots, diced
2-1/2 c. potatoes, skin on, diced
1 tsp. fresh parsley
1 c. chicken broth
1 salmon fillet or 6 steaks (about 2 lbs.)
salt and pepper to taste

In a saucepan, cook onions, carrots, parsley, potatoes and mushrooms in broth until vegetables are almost tender. Do not drain off liquid. Use shallow baking pan lightly coated with cooking spray (if grilling, cover the bottom of pan with aluminum foil). Place salmon in pan. Sprinkle with salt and pepper. Spoon vegetable mixture and liquid around salmon. Place pan on top rack and bake at 325 degrees for 20-30 minutes (if grilling, place pan on top rack of grill and close cover). Check periodically. If vegetables are browning too much, cover pan with foil.

Macaroni Salmon Salad Recipe

2 c. boiled and cooled macaroni (1 c. uncooked)
1 c. diced cucumber
8 oz. can salmon
1 T. grated onion
1 T. minced parsley
3/4 c. mayonnaise
1/2 tsp. salt
1/4 tsp. pepper

In a medium size bowl, mix cooled macaroni, cucumber, onion, and salmon. Add mayonnaise, parsley, salt and pepper. Toss until blended.

Oven Baked Pecan Salmon Recipe

2 T. Dijon-style mustard
2 T. melted margarine or butter
4 tsp. honey
1/4 c. fresh bread crumbs
1/4 c. finely chopped pecans or walnuts
2 tsp. chopped parsley
Four 4- to 6-ounce salmon fillets
Salt and black pepper to taste
Lemon wedges

Mix together mustard, margarine and honey in a small bowl; set aside.

Mix together bread crumbs, pecans and parsley in a small bowl; set aside.

Season each salmon fillet with salt and pepper. Place on a lightly greased baking sheet or broiling pan. Brush each fillet with mustard-honey mixtrue. Pat top of each fillet with pecan-bread crumb mixtrue. Bake in a 450-degree oven for 10 minutes or until salmon just begins to flake easily when tested with a fork. Serve with lemon wedges.
Makes 4 Servings


Salmon Quesadillas Recipe

4 oz. goat cheese
4 oz. light cream cheese (Neufchatel)
1/4 cup sour cream
2 green onions, chopped
2 T. fresh dill, minced
1/4 t. fresh black pepper
8 (8-inch) flour tortillas
1/4 lb. smoked salmon, sliced thin
4 t. olive oil

Thoroughly combine goat cheese, cream cheese, sour cream, onions, dill and pepper. Spread mixture on 4 of the flour tortillas. Add salmon slices. Top with remaining tortillas. Heat a skillet with 1 teaspoon olive oil. Grill until brown. Turn and grill other side. Repeat for the other three. Cut each into sixths and serve warm.
Serves 4 to 6.

Dill Salmon Steaks

4 salmon steaks
1/2 cup chopped green onions
1 tbs. butter
1 can condensed cream of chicken soup, undiluted
1/2 cup fat free half-and-half
2 tbs. chicken broth
2 tbs. fresh dill, chopped

Saute the onions and butter in a large skillet. Add the soup, cream, broth, and dill. Place the salmon steaks on top of the sauce and onions. Cover and simmer for 15 minutes or until fish flakes easily with a fork. Serve, pouring sauce on top.
Makes 4 Servings
