This is a recipe I used to make a lot, but haven't made in a few years. It came from one of my sisters-in-law before she drowned in a flash flood. Her granddaughters are looking for some of her recipes, and this is the only one I've located so far. They would like one in her handwriting, but we haven't found one yet. This whole recipe is 124 Smart Points, but you can lower the points a lot if you substitute 1 cup Splenda for the sugar. With Splenda, the whole recipe is only 76 Smart Points. I think I would use 1/4 cup applesauce and 1/4 cup cooking oil, to lower them more.

Arlene's Raw Apple Cake Recipe

1 cup sugar
1/2 cup cooking oil
1 egg
1 tsp. vanilla
1-1/2 cups flour
1 tsp. salt
1 tsp. soda
2 cups diced apples
1/2 cup nuts
1/2 cup coconut

Mix all ingredients and press into 8 X 8 X 2" pan. Batter will be very stiff. Bake at 350 degrees for about an hour.
