Diet Lemon Meringue Pie Recipe

1 sm. box sugar free lemon gelatin
1 c. boiling water
1/2 c. cold water
3 T. corn starch
3 egg yolks
1/4 c. lemon juice
3 egg whites
1 pkg. Sweet and Low
1 baked 9inch pie shell

Dissolve gelatin in boiling water, add cold water. Let sit until mixture reaches room temperature. In heavy sauce pan mix together gelatin, yolks, corn starch and lemon juice. Cook, stirring constantly until mixture starts to boil, boil one minute. Pour into pie shell. Beat egg whites until soft peaks. Add Sweet and Low. Beat for 30 seconds more. Put on hot pie. Bake in 350 degrees oven until meringue browns.
