Chicken Salad Sandwich Recipe

1-1/4 to 1-1/2 lbs of boneless skinless chicken breast
1/2 cup finely chopped celery
1/2 roasted almonds, sliced
1-1/2 cup mayonnaise
1-1/2 green grapes (cut in half)

Cook chicken until done. When cool, cube chicken. Add celery, almonds, grapes, and mayo, mix well. Refridgerate overnight. Place spread on croissant, lettuce, and sliced tomato.

Chicken Mandarin Salad Recipe

2 T sugar
1/2 t black pepper
1 t Lawrey's Seasoned Salt
1/4 regular vinegar (or rice vinegar)
1/2 C salad oil
2 boneless, skinless chicken breasts
3 green onions, chopped
1 head lettuce, shredded
1 can mandarin oranges
2 T toasted sesame seeds
1 sm package slivered almonds
1/2 C thin chow mein noodles

Combine the first five ingredients as dressing. Make sure the sugar is dissolved. Refrigerate for a few hours. Cook and shred chicken. Combine the remaining ingredients just before serving and toss with dressing.

Chicken and Fruit Salad Recipe

3 - 4 c. cooked chicken breast, cubed
3/4 c. celery, chopped
3/4 c. seedless grapes, halved
1 (20 oz.) can pineapple tidbits, drained
1 (11 oz.) can mandarin oranges, drained
1/3 c. mayonnaise
1/4 tsp. salt
1/2 c. chopped nuts
2 T. chopped mint, optional
Cantaloupe rings

Toss cubed chicken breast, celery, grapes, pineapple tidbits and mandarin oranges. Fold in mayonnaise, salt, nuts, and mint. On salad plates, place lettuce leaves and cantaloupe rings. Spoon on salad. Garnish with nuts and mint sprigs.
