Chicken Breast In Gravy Recipe

Ingredients
2 lbs. chicken breast
1/4 tsp. dill weed
2 cans cream of chicken soup
1/4 c. water
salt and pepper to taste

Directions
Spray 10 x 14-inch pan; add chicken breast, soup (mixed with water) on top of chicken. Sprinkle top with dill weed, salt and pepper. Bake at 350 degrees about 2 hours or until chicken tests done. The soup and water makes its own gravy.

Chicken Rice Broccoli Casserole Recipe

Ingredients
1 medium onion, chopped
1/2 stick butter or margarine
1 pkg. chopped broccoli, thawed
1 can cream of mushroom soup
1 small jar Cheez Whiz
1 1/3 cup cooked minute rice
1 (6 oz.) can boned chicken
1/4 cup slivered almonds

Directions
Melt butter in large skillet. Saute chopped onion in butter until tender. Add pkg. broccoli. Stir in mushroom soup. Blend well. Add Cheez Whiz and stir until thoroughly blended. Add cooked Minute Rice. Mix well. Stir in chicken and almonds. Simmer on low heat 5-10 minutes. Pour into 1 1/2 quart casserole. Bake uncovered, in 350 degrees oven for 30-35 minutes.

There was no newsletter sent out for the past week. I posted  I was taking time off to visit friends and relatives from Arizona and Oregon. I did not state that I was going to Arizona to see them. I did not want anyone to know that I was not at home for security reasons. A friend took care of the cats while I was gone. Both Ditto and Little One are glad I am back home. I got to see my brother Joe and his wife Joyce. I saw my sister-in-law Betty and her sisters from Alaska and Oregon. It was a great trip but it is always great to come back home.

Baked Chicken Recipe

Ingredients
1-1/2 c. crisp rice cereal, coarsely crushed
2 T. all purpose flour
1/2 tsp. salt
1/4 tsp. dried thyme
1/4 tsp. poultry seasoning
1/4 c. butter or margarine, melted
4 boneless, skinless chicken breast halves

Directions
In a shallow bowl, combine cereal, flour, salt, thyme and poultry seasoning. Place butter in another bowl. Dip chicken into butter, then into cereal mixture. Place in a greased 11 x 7 x 2-inch baking pan. Drizzle with remaining butter. Bake, uncovered at 400 degrees for 20 to 25 minutes or until juices run clear.
Yield: 4 Servings.

Blackberry Cobbler Recipe

Ingredients
1 qt. blackberries
1 1/2 c. sugar
1 c. water
1/2 stick margarine
pie dough

Directions
Heat blackberries, sugar and water. Then put blackberries in a deep baking dish lined with pie dough. Roll out small amounts of dough (1/2 teaspoon) for dumpling like pieces to place around in blackberries. Then cover with a top of crust of pie dough. Sprinkle lightly with sugar. Bake at 350� until brown.

Butterscotch Dessert Recipe

Filling:
2 c. boiling water
2 c. brown sugar
6 T. flour
6 T. butter
1 T. vanilla

Topping:
1 c. brown sugar
1-1/2 c. flour
1/4 t.sp. salt
1/4 tsp. baking soda
1-1/4 c. oatmeal - regular or instant
3/4 c. butter

Directions
Using filling ingredients, bring water to a boil. In a separate bowl, combine flour and brown sugar, removing any lumps. Add dry mixture to boiling water. Stir until thickened then remove from heat and add butter and vanilla and stir until well incorporated. Set aside. Prepare topping by combining dry ingredients then adding cold butter to mixture with a pastry cutter until well mixed and crumbly. Place 2/3 topping mixture in prepared 8 x 8 inch pan to form a crust. Press the bottom with the back of a spoon or hand. Pour filling mixture over crust and crumble remainder of topping over filling. Bake at 350 degrees for 20 to 25 minutes. Cut into squares when cooled.

Apricot Peach Cobbler Recipe

Ingredients
1/2 c. sugar
2 T. cornstarch
1 can (1lb. 13 oz.) sliced peaches, drained, juice reserved or fresh peaches
1 can (10 1/2 oz) apricot halves, drained, juice reserved or fresh apricots
1 T. butter
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/2 c. flour
1/2 c. sugar
3/4 tsp. baking powder
1/4 tsp. salt
2 T. butter, softened
1 large egg

Directions
In a saucepan, mix together sugar and cornstarch. Stir in 1/2 cup each of reserved peach and apricot juices. Cook over medium heat, stirring constantly, until mixture boils and thickens, 2 minutes. Stir in butter, cinnamon, and nutmeg. Add peaches and apricots. Spoon fruit mixture into a 1-1/2 quart casserole. To prepare topping, mix together flour, sugar , baking powder, salt, butter, and egg. Spoon topping over fruit mixture. Bake at 350 degrees until topping is lightly golden, 30 minutes. Cool slightly on wire rack. Serve cobbler warm, topped with spiced whipped cream with 1/2 teaspoon cinnamon mixed in whipped cream.

Onion Soup Pork Chops Recipe

Ingredients
1 envelope Lipton onion soup mix
2 eggs, beaten
2/3 c. plain dry bread crumbs
8-1/2 in. thick pork chops

Directions
Preheat oven to 350 degrees. Combine soup mix with bread crumbs. Dip chops in eggs, then in the bread crumbs mixture. Place in lightly greased large shallow baking pan. Bake turning once, for 1 hour or until tender

Southwestern Pork Chops Recipe

Ingredients
6 pork chops
3 T. vegetable oil
1 lg. onion, cut in slices
2 tsp. chili powder
1 green pepper, chopped
1 c. uncooked regular rice
1 (8 oz.) can tomato sauce
1-1/4 c. water
1 tsp. salt

Directions
Brown chops well on both sides in oil in a skillet. Remove. Brown onion slices on both sides in same oil. Remove. Stir in chili powder and cook 2 minutes. Add green pepper, rice, tomato sauce, water, and salt. Heat to boiling. Pour into shallow 8 cup baking dish. Arrange browned chops over rice and place an onion slice on each chop. Cover dish and bake at 375 degrees for 1 hour, or until liquid is absorbed.

Crock Pot Smoked Sausage With Sauerkraut Recipe

Ingredients
2 lbs. light smoked sausage
3 (15 oz.) cans sauerkraut

Directions
Cut smoked sausage into bite size pieces, place into a 4 quart crock pot. Open and pour cans of sauerkraut over meat.
Cook on low for 2-1/2 hours.

Steamed Cabbage and Sausage Recipe

Ingredients
1/2 large head cabbage, cut into large chunks
4-6 large carrots cut into large chunks
4 med. potatoes, cut into large chunks
1 large onion, cut into large chunks
1 lb. or more smoked sausage, cut into large pieces

Directions
In a steamer basket of a large stewpot or saucepan, layer the cabbage, carrots, potatoes, onion, and sausage. (You can use lite smoked sausage to cut down on fat if you prefer.) Put about 1 cup water into bottom of steamer. ;INSERT steamer basket; add salt and pepper of you like. Cover and let steam for about 20-30 minutes, or until vegetables are tender. Check to see if more water is needed about half-way through cooking time. Serve with cornbread.
Serves 4 to 6.

Italian Sausage Zucchini Boats Recipe

Ingredients
6 med. zucchini, halved lengthwise
1/2 lb. hot or reg. Italian sausage
1/4 c. onion, chopped
1 clove garlic, crushed
1/3 c. Italian bread crumbs
1/4 c. parmesan cheese
1/4 lb. mozzarella cheese, shredded

Directions
Boil zucchini for 10 minutes and drain. Scoop out leaving 1/4 inch shell. Mash insides and drain well. Put shells in shallow baking dish. Remove casings from sausage and break up. Cook for 5 minutes. Add onion and garlic and cook for 3 minutes. Stir in mashed zucchini, bread crumbs and mozzarella cheese. Spoon into shells and sprinkle with parmesan. Bake at 350 Degrees for 30 minutes or until hot.

Momís Split Pea Soup Recipe
Serves: About 10 cups

Ingredients
8 cups water
2 cups (a 1 lb. bag) of dry split peas
2 Tablespoons Olive Oil
1 Tablespoon butter
2 cups chopped onions
2 cups chopped carrots
2 cups diced ham
2 bay leaves
1 1/2 Tablespoons onion powder (optional)
1 tablespoon minced garlic
2 teaspoons salt (optional- the ham bone adds salt to the soup already)
1 large russet potato, chopped into cubes

Instructions
Put the water, onions, carrots, & ham bone, in a large pot together and bring to a boil. Add all remaining ingredients except for the potato. Reduce the heat and let the soup simmer for approximately 2 hours, stirring occasionally. Add the potato about 40 minutes prior to eating. When the potato pieces are done, youíre ready to eat! Itís as easy as that.

Looking for a tried and true Rhubarb Cobbler made with cake mix. I've seen a few online, but they are all different. I really want a for sure never-fail recipe.

Avocado Ranch Burgers with Smoked Cheddar Recipe

Recipe Ingredients
1 (1-ounce) packet ranch dip mix
1 pound lean ground beef
1/3 cup minced red onion
1/4 cup barbecue sauce
3/4 cup shredded smoked cheddar cheese
4 slices sourdough bread
1 ripe, Fresh Hass Avocado, seeded, peeled and mashed *
4 romaine lettuce leaves
8 tomato slices

Directions
Place 1/4 of the dry ranch mix in a small bowl; set aside. Ina medium bowl, mix together the remaining ranch mix, ground beef, onion andbarbecue sauce; mix well. Form into 4 large flat patties and grill over mediumheat for 5 to 6 minutes per side or until cooked through. Top each with about 3tablespoons shredded cheese while still warm. Grill bread slices until lightlytoasted. Add mashed avocado to remaining dry ranch mix and mix well. Toassemble, top each bread slice with a lettuce leaf, 2 tomato slices and aburger patty. Add a heaping spoonful of seasoned avocado. 4 sandwiches

* Large avocados are recommended for this recipe. A largeavocado averages about 8 ounces. If using smaller or larger size avocados,adjust the quantity accordingly.

Appetizer Potatoes With Herring Recipe

Ingredients
10 potatoes
1 salted herring fillet
Mayonnaise
Chopped green onions

Directions
Cook potatoes in their skins in salted boiling water, peel. Slice each potato lengthwise into 2-3 rounds. Coat each potato round with mayonnaise and top with a slice of herring. Sprinkle with chopped green onions.

Bacon Egg Cheese Muffins Recipe
Makes 6 Servings

Ingredients
8 eggs
1/3 cup milk
6 English muffins, split, toasted
3 tbs Dijon mustard
6 slices cheddar cheese
6 slices cooked bacon, halved

Directions
Heat oven to 35Oį. Coat 9x13" baking pan with cooking spray. In bowl, beat eggs and milk, season. Transfer to pan. Bake 15 min. Cut into 6 squares. Spread muffin bottoms with mustard. Top with cheese, egg squares, and bacon, add muffin tops. SERVE & ENJOY.
