Diet Lemon Meringue Pie Recipe

Ingredients
1 sm. box sugar free lemon gelatin
1 c. boiling water
1/2 c. cold water
3 T. corn starch
3 egg yolks
1/4 c. lemon juice
3 egg whites
1 pkg. Sweet and Low
1 baked 9inch pie shell

Directions
Dissolve gelatin in boiling water, add cold water. Let sit until mixture reaches room temperature. In heavy sauce pan mix together gelatin, yolks, corn starch and lemon juice. Cook, stirring constantly until mixture starts to boil, boil one minute. Pour into pie shell. Beat egg whites until soft peaks. Add Sweet and Low. Beat for 30 seconds more. Put on hot pie. Bake in 350 degrees oven until meringue browns.

My friend has a grape vine that has the best grapes.  How do I get a cutting to start a vine of my own.  Is there a certain time of the year to do this and how does one get a cutting.

Diet Strawberry Pie Recipe

Ingredients
12 pkgs Sweet n Low
3-1/2 tsp cornstarch
1 cup diet 7-Up
2 1/2 - 3 c whole strawberries
1 baked pie shell
Low calorie topping

Directions
In saucepan, combine sweetener, cornstarch with cola. Bring to a boil and cook til thickened. Cool. Wash and dry strawberries and arrange in pie shell. Pour thickened glaze over berries making sue all are covered. Chill and serve with low calorie topping.

Diet Pumpkin Pie Recipe

Ingredients
1 - 16 oz. can solid packed pumpkin
1 - 13 oz. can evaporated skim milk
1 egg
2 egg whites
1/2 c. buttermilk biscuit mix
8 pkgs. sugar substitute
2 tsp. vanilla
1 frozen pie crust

Directions
Place all ingredients in blender and process until smooth. Pour into pie crust. Bake at 350 degrees for 50 minutes or until center is puffed.

My ability to make biscuits is limited.  I would like to make some homemade biscuits that are not hard and dry.  Can someone help me with some tips.

Diet Coconut Pie Recipe

Ingredients
3 oz. Cream Cheese
4 pkgs. Equal
1 c. Cool Whip, Sugar Free
1 sm. box Jello Sugar Free Vanilla Instant Pudding Mix
1-1/2 c. Milk
1/2 tsp. Coconut Flavoring
3 T. Coconut
1 (9") Pie Crust, bake and cooled

Directions
Mix cream cheese and Equal, add Cool Whip. Mix Jello pie mix, milk and flavoring. Mix with cream cheese mixture. Put into cooked, cooled pie crust and cover with more Cool Whip.

Cauliflower Salad Recipe

Ingredients
1 medium head of cauliflower broken into small pieces
1/4 cup mayonnaise
2 Tbsp. lemon juice
2 packets sugar substitute
1/4 tsp. dry mustard
2 green onions, complete, sliced
celery (optional )
2 Tbsp. green pepper , chopped
salt and pepper to taste

Directions
Cook cauliflower in boiling, salted water 10 minutes or until tender. Drain ,rinse under cold water and pat dry
In large bowl mix mayonnaise,sugar substitute, lemon juice and mustard. Add vegetables and mix until vegetables are evenly coated with dressing. Add salt and pepper. Chill at east 30minutes before serving.

El Dorado Beef Casserole Recipe

Ingredients
1 lb. ground beef
1 medium onion, choped
2 (8 oz.) cans tomato sauce
1 cup water
1/4 tsp.chili powder
1 9 oz. package tortilla chips, coarsely crushed
1 cup sour cream
1 cup (4 oz ) shredded Monterey Jack cheese

Directions
Coat a 1-1/2 quart casserole with cooking spray.
Brown beef and onion in a large skillet for 5 minutes. Add tomato sauce, water and chili powder. Mix well and simmer for 3 minutes.
Spread 1/3 of the beef mixture into the casserole. Top with 1/3 crushed tortilla chips, the 1/3 cup of the sour cream. then 1/3 cup of the cheese. Repea these layers 2 more times ending with cheese.
Bake at 375º 25-30 minutes until bubbly and the topis golden.
Serves 4

Recently I got married for the first time at the age of 63.  I have never had children or been around children for 25 years.  My new husband wants me to give a party for his 4 year old grandson.  I have no idea what 4 year old wants for a party or what kind of cake to make. Help, I need ideas.

Beef Hash Recipe

Ingredients
1/3 cup crushed saltine crackers
1 Tbsp. butter, melted
1 1/2 cups left over roast beef, cubed
1 cup coked potatoes, cubed
1 5 oz. can evaporated milk
1/5 cup chopped parsley
1/4 cup choppednion
2 tsp. Worchestershire sauce
1 tsp. salt

Directions
Toss together crumbs and butter. Set aside.
Combine remaining ingredients, tossing lightly. Put into a lightly greased 1 quart casserole. Sprinkle crumbs
around the edges of the casserole.
Bake, uncovered at 350º 30 minutes or until heated through.
Serves 4

Barbecue Beef Recipe

1 1/2 cups cooked roast beef, cut into thin strips
2 Tbsp. sugar
2 Tbsp. vinegar
4 Tbsp butter
1 onion, slice
1/4 green pepper,cut into thin strips
1/2 cup catsup
3/4 cup water
2 tsp. prepared mustard
2 tsp. lemon juice
1 tsp. salt
1 tsp. paprika
1 tsp. MSG
1/4 tsp. pepper

Combine vinegar,sugar,mustard,lemon juice,salt, pepper paprika,water,butter, and onion.Simmer, uncovered for 20 minutes. Add beef, catsup and Mg. Refrigerate. To serve heat and top with chopped parsley if desired.
Serve on buns or over noodles or rice.

Grandma's Favorite Squash Casserole Recipe

Ingredients
1-1/2 pounds yellow squash
3 tablespoons bread crumbs
2 tablespoons margarine
2 egg whites
1 tablespoon minced onion flakes
2 teaspoons margarine

Directions
Preheat oven to 350F. Wash and slice squash and put in pan of water. Cook on top of the stove until soft, drain. In a large bowl mash squash up. Add the 2 tablespoons of margarine, egg whites, onion and half of the bread crumbs, mix well. Pour mixture in a greased pan. Dot the top with 2 teaspoons of margarine and sprinkle the rest of the bread crumbs on top. Bake for 45 minutes.

Squash Souffle Recipe

Ingredients
2 pounds sliced yellow summer squash
1 medium onion, chopped
1 teaspoon salt
1 cup milk
2 eggs, lightly beaten
3 tablespoons melted butter
3 tablespoons flour
8 ounces cheddar cheese, grated
seasoned salt and pepper, to taste
buttered bread crumbs

Directions
Combine squash, onion, and salt in a large saucepan; cover with water and simmer until vegetables are tender, about 15 to 20 minutes. Drain; mash well. Add milk, eggs, melted butter, flour and cheese. Add salt and pepper to taste. Bake in a buttered 1 1/2 quart casserole for about 30 minutes at 350F. Top with crumbs and bake for about 10 more minutes.
Serves 4.

Squash and Onions Recipe

Ingredients
2 pounds yellow crookneck squash, sliced into 1/8 inch slices
1 medium onion, chopped
1/4 teaspoon black pepper
1/4 teaspoon salt

Directions
Place all ingredients in 2 quart saucepan and add 1 inch of water. Bring to boil and reduce heat to simmer. Cover and cook for 5 to 7 minutes or until tender. Drain and serve.
Makes 4 Servings

Stuffed Portabella Mushrooms Recipe

Ingredients
4 medium portabella mushrooms
2 tablespoons butter
1/2 cup chopped onion
2 teaspoon finely chopped garlic
1/2 cup crumbled blue cheese
1/3 cup chopped walnuts

Directions
Preheat oven to 400F. Remove portabella stems; trim and chop stems, makes about 2 cups. In a medium skillet, over medium heat, heat butter. Add onion, garlic and chopped mushroom stems; cook and stir until onion is soft and mushrooms are lightly browned, about 5 minutes. Stir in cheese and walnuts. On a shallow baking sheet, place portabella caps, stem side up. Divide mushroom cheese mixture among portabellas. Bake until mushrooms are tender, about 20 minutes. Sprinkle with chopped parsley, if desired.
Serves 4.

Sauteed Mushrooms Recipe

Ingredients
1 pound fresh mushrooms, whole
3 tablespoons butter or margarine
3 tablespoons Parmesan cheese, grated
1/8 teaspoon pepper

Directions
In a large skillet melt butter; add mushrooms, a few at a time, and cook over medium high heat until golden. Shake pan frequently during cooking. Sprinkle with cheese and pepper; cook 1 minute longer.
Serves 4.

Lisa's Salad Recipes (4 Recipes)

Marinated Mushrooms Recipe

Ingredients
1 pound small fresh mushrooms
3/4 cup wine vinegar
1/2 cup salad oil
1/4 cup water
1 leaf bay leaf, broken
1 teaspoon fennel seeds, crushed
1/4 teaspoon salt
1/2 teaspoon seasoned pepper
1 clove garlic, pressed
1 tablespoons parsley, minced

Directions
Rinse mushrooms quickly or wipe with damp paper towels. Combine the remaining ingredients except garlic and parsley and boil for 5 minutes. Pour over mushrooms and stir well. Add garlic. Cover and refrigerate at least 12 hours. Stir or turn occasionally. Sprinkle with parsley, drain and serve.
Serves 6.

Coleslaw Salad Recipe

Ingredients
1 tsp salt
1/4 tsp pepper
1/2 tsp dry mustard
1/2 tsp celery seed
2 Tbl sugar
1/4 cup chopped green pepper
1 Tbl pimiento
1 tsp instant minced onion
3 Tbl salad oil
1/3 cup white vinegar
4 cups cabbage (1/2 head), shredded

Directions
Place ingredients in a large bowl in order listed. Cover and refrigerate at least 3 hours or overnight. Drain before serving.

Spinach Salad Recipe

Ingredients
1 bag "ready to use" spinach
1 can mandarin oranges (drained)
1/2 med. bermuda onion, sliced in rings
1/2 c. broken walnuts
1 bottle "Ken's" Raspberry Vinaigrette

Directions
Have salad plates ready. On each, layer spinach, oranges, onion rings, then walnuts. Pour over dressing.

German Potato Salad Recipe

Ingredients
1/2 pkg. sliced bacon
1/2 c. chopped onion
1/4 c. distilled white vinegar
5 T. sugar
1 tsp. salt
8 med. potatoes, peeled
1/4 c. water

Directions
Fry bacon and onion. Cut peeled potatoes into chunks and add 1/4 c. water to a large pyrex bowl. Cover with plastic wrap and cook in microwave for 20 - 25 minutes, stirring after half the cookining time when bacon and onion are brown (do not drain bacon fat) add vinegar, sugar and salt. Stir well while heating until sugar disolves. When potatoes are done and tender, add the bacon mixture and stir well.

Pea Salad Recipe

Ingredients
1 - 10 oz. pkg. frozen peas
2 celery ribs, thinly sliced
1 c. small cauliflowerets
3 green onions, thinly sliced
1/2 c. ranch salad dressing
1/4 c. sour cream
4 bacon strips, cooked and crumbled
1/4 c. sunflower seeds (shells removed)

Directions
In a large bowl combine peas, celery, cauliflower and onions. Combine dressing and sour cream. Pour over salad and mix well. Cover and refrigerate for 1 hour. Just before serving, stir in bacon and sunflower seeds.

Tomato and Cucumber Salad Recipe

Ingredients
2 or 3 tomatoes, chopped and seeded
1 lg. cucumber, seeded and chopped
1/4 tsp. garlic salt
pepper
1/4 c. olive oil

Directions
Mix together tomatoes and cucumber. Mix garlic salt,pepper and olive oil. Pour over tomato and cucumber.
