Lisa's Lemon Pepper Baked Chicken Breast Recipe

Ingredients
4 chicken breasts
lemon pepper
salt
1/2-3/4 c water

Directions
Sprinkle chicken breasts with lemon pepper and salt on both sides. Place in baking dish, add water, cover and bake 1 hour and 45 minutes at 350 degrees.

Lisa's Stir Fry Chicken Recipe

Ingredients
2 chicken breasts, skinless boneless
3 T. soy sauce
2 tsp. corn starch
1/8 tsp. garlic powder
1/8 tsp. sugar
2 green peppers, small
1/2 lb. fresh mushrooms
salad oil
1/2 c. water

Directions
Cut chicken into 1/8 inch strips. Mix chicken strips, soy sauce, corn starch, garlic powder and sugar. Set aside.Cut peppers into 1/4 inch strips, thinly slice mushrooms. Cook vegetables in hot wok in 2 T. of oil for about 2 minutes, stirring . Remove vegetables to a bowl. Add 3 T. of oil to wok. Cook chicken and sauce about 5 minutes, until done. Add vegetables and water. Boil 1 minute. Serve.

Lisa's Honey Baked Chicken Recipe

Ingredients
salt and pepper
4 tablespoons melted butter
1/2 cup honey
flour to dredge
1 cup rich milk
1/2 cup mushrooms
4 boneless chicken breasts, skinned

Directions
Season with sea salt and pepper. Dust chicken with flour; arrange in flat baking dish or roaster. Pour melted butter over top. Bake in hot oven (about 400 degrees F), uncover, 1/2 hour to brown. Then reduce heat to moderate temperature. Mix milk with honey; pour over chicken and bake 1 hour. Add mushrooms 15 minutes before serving. Serves 4 to 5.

Lisa's Chicken in Foil Packets Recipe

4 boneless chicken breasts split
4 Idaho potatoes peeled and sliced about 1/4 inch
sm. onion, sliced
green or red bell pepper
sliced fresh mushrooms, sliced
butter or margarine
salt and pepper to taste
garlic powder

Using heavy-duty aluminum foil, make a package. Layer ingredients one next to each other alternating, potato, onion, pepper and mushrooms. Place chicken breast on top. Dot with butter (be liberal). Add salt, pepper and garlic powder to taste. Close package being sure that it is sealed all around so that it doesn't leak and loose all the juices.
Cook on grill turning several times in a while.

Can also be done in oven at 350 degrees. It will take about 30-40 minutes.

Place on plate and serve right out of packet.

Lisa's Pecan Crusted Chicken Recipe

Ingredients
1/4 tsp salt and pepper
4 - 6 oz. skinned chicken breast
8 drum sticks, skinned
1/4 c. honey
2 T. dijon mustard
3/4 tsp paprika
1/8 tsp. garlic powder
1-1/4 c. finely crushed cornflakes
1/2 c. finely chopped pecans

Directions
Preheat oven to 400º. Sprinkle salt and pepper evenly over chicken and set aside. Combine honey, mustard, paprika and garlic powder in a small bowl and stir well. Combine cornflakes and pecans in a shallow dish and stir well. Brush both sides of chicken with honey mixture.

Lisa's Lemonade Chicken Recipe

Ingredients
3 pounds chicken (legs, thighs, breasts)
1 tsp. salt
6 oz. can frozen lemonade
3 T. brown sugar
2 T. salad oil
3 T. ketchup
2 T. flour
2 tsp. vinegar

Directions
Toss chicken in flour and salt until well coated. Cook chicken in hot oil until browned on all sides. In 2 c. measure, combine undiluted lemonade concentrate thawed, brown sugar, ketchup, and vinegar; add enough water to make 2 c. Pour lemonade mixture and an additional 1/2 c. water into skillet. Cover and cook over low heat 30 minutes or until chicken is fork tender.

I need help converting a regular recipe to a pressure cooker recipe. Does anyone have suggestions on this. Also I would like to convert some regular recipes to a crockpot. Timing and amount of liquid added are areas where I need help.

Linda's Apple Enchiladas Recipe

Ingredients
1 can apple pie filling
6 (8 in) flour tortillas
1 t. ground cinnamon
1/3 cup butter
1/2 cup sugar
1/2 cup brown sugar
1/2 cup water
8 oz. cream cheese
1/4 cup confectioer's sugar
1 t. vanilla

Directions
Mix confectionary sugar, vanilla and cream cheese. Spread each tortilla with about 2 T. of cream cheese mixture. Spoon fruit filling evenly down center of each tortilla. Sprinkle with cinnamon. Roll up & place seam side down in a lightly greased 2 qt. baking dish. In a saucepan bring butter, sugars & water to a boil. Reduce heat, simmer, stirring constantly for 3 minutes. Pour over enchiladas. Let stand 30 minutes. Bake at 350 degrees for 20 minutes.

Linda's Black Forest Dump Cake Recipe

Ingredients
1 (8-oz.) can crushed pineapple
1 (21-oz.) can cherry pie filling
1 (18.5-oz.) pkg. devil's food cake mix
1 c. chopped pecans
1/2 c. margarine, melted
1 sm. container Cool Whip

Directions
Drain pineapple, reserving liquid. Spread pineapple in a lightly greased 13x9x2-inch pan; add pie filling,spreading gently. Sprinkle dry cake mix on pie filling; top with pecans. Combine margarine and reserved pineapple liquid; drizzle on mixture in pan. Bake at 350 degrees for 35 to 40 minutes. Cut into squares; top with Cool Whip.
Yield: 10 servings.

Linda's Breakfast Burritos Recipe

Ingredients
4 strips bacon crisp
1 small onion diced
1/4 green pepper diced
1/4 c. diced mushrooms
4 eggs
1/2 c. cheddar cheese (optional)
salt and pepper to taste

Directions
Crumble bacon into small pieces. Saute diced onion, pepper and mushrooms for 3 minutes. Add the bacon and scramble the eggs into the ingredients. When through cooking add cheese if using. Warm soft burritos on both sides and fill with mixture. Yields about 5 burritos.
Makes 4 Burittos

Linda's Cherry Dessert Recipe

Crust
1 pkg. Keebler Sandies cookies
1/2 stick butter (room temp)

Topping
1 (8 oz) container Cool-Whip
3 c. powdered sugar
8 oz. cream cheese, softened
1 can cherry pie filling

Directions
Start by heating your oven to 350 degrees. Use a food processor, crumble the entire package of cookies (in small batches) and add to a large mixing bowl. Stir in the softened butter. Press cookie mixture tightly into the bottom of a 9 x 13" baking dish, bake for 20 minutes (I put cookies in Ziploc bag and crush with rolling pin.). after the crust has completely cooled, mix together the Cool Whip, cream cheese and powdered sugar. Spread over the crust. Cool in the refrigerator for 20 to 30 minutes. Next, spread cherry pie filling...and enjoy!

Mary J's Chinese Noodle Salad Recipe

Ingredients
1 pkg. uncooked Top Ramen noodles
1 pkg. shredded cabbage or shredded broccoli
2 chopped greem onions
2 T. sesame seeds
2 T. sliced almonds
2 cooked chicken breast, chopped into small bite size pieces
1/2 c. vegetable oil
2 T. sugar
1 tsp. salt
1/2 tsp. pepper
3 T. rice vinegar

Directions
In a large bowl, break apart Top Ramen noodles and combine with all other ingredients. Toss to mix well. Refrigerate at least 2 hours or overnight.

Mary J's Pineapple Country Spareribs Recipe

Ingredients
3 lbs. country style ribs, boneless
3 T. brown sugar
2 T. cornstarch
1/2 tsp. salt
1/4 tsp. vinegar
1/2 c. catsup
1 T. shoyu
1 (8-oz.) can crushed pineapple (undrained)

Directions
Cut ribs into serving pieces, trim off excess fat. Set ribs aside. In saucepan, combine brown sugar, cornstarch, salt, vinegar, catsup, shoyu and crushed pineapple with juice. Cook until slightly thickened, stirring constantly. Arrange ribs in roasting pan. Pour pineapple mixture over ribs. Cover with foil tightly and bake at 350 degrees 1 1/2 to 2 hours. Makes 6 servings.

Mary J's Pineapple Cream Pie Recipe

Ingredients
8 oz. pkg. cream cheese, softened
1/4 c. sugar
1-1/2 c. frozen whipped topping, thawed
1 can (15.5 oz.) crushed pineapple, well drained
9" graham cracker pie crust
1 can (15.5 oz.) pineapple chunks, drained

Directions
Mix together cream cheese and sugar in bowl.Fold in whipped topping and well drained crushed pineapple. Spoon into pie crust. Top with pineapple chunks. Chill 2 hours or overnight. Garnish with additional whipped topping if desired.

Recently I purchased an Oster bread maker but I know nothing about bread makers. Does any one have a tried and true bread recipe for a bread maker.

I want to know, if any of the ladies on your site have got a instant pot, I just got mine a few weeks ago, love, love, it. It is like a pressure cooker but need less water and you can make cheesecakes, meals, ribs, there isn't anything you can't make, I make a whole pot of pasta and sauce with meatball in about 8 mins after it comes to pressure. I would like to know if any of the ladies have some recipes for this pot.

Albacore Tuna "Martini" for One Recipe

Ingredients
1 (3.75 oz.) can albacore tuna ( in oil preferred)
1 few slices red onion, soaked in water 15 min. to take off sharp edge
Sprinkle of capers
1 heaping teaspoon olive tapenade
1 heaping teaspoon sour cream
2 chives for garnish

Directions
Start with tuna ,sprinkle on a few slices of onion, than a few capers.
Dollop a spoonful of olive tapenade off to one side of the glass & place sour cream next to it.
Finish with a criss-cross of chives. ( One tapenade is a combo of olives, anchovies & garlic)

To Marilyn: I always look for your recipes in the newsletter. I love seafood! I haven't tried adding coconut to the recipe I sent, but I don't see why you couldn't add it.

Guess you just have to experiment. Sure wish I had that orange cocktail sauce. Never heard of it. I really miss the seafood from when I lived in Florida.
Here's another shrimp recipe.

Peruvian Shrimp Cocktail Recipe

Ingredients
1 1/2 lb. small cooked shrimp
1 ripe red tomato, seeded & cut into 1/2 in. dice
1/2 red onion, cut into 1/2 in. dice
1 clove garlic, minced
1-2 jalapeño chilies, seeded & minced
3 T. chopped fresh cilantro
3 T chopped fresh parsley
1/2 cup fresh lime juice
1/2 cup fresh lemon juice
1 1/2 t. salt
1/2 t. freshly ground black pepper
6 romaine lettuce leaves (taken from the heart) for garnish

Directions
Place shrimp, tomato, onion, garlic, chilies, cilantro, parsley, lime & lemon juices, salt & pepper in glass or stainless steel mixing bowl & toss to mix. Marinate 5 min. Spoon the ceviche into 6 clear margarita or wine glasses, standing a lettuce leaf upright in each.
