Jackie's Cucumbers and Onions in Vinegar Recipe

Ingredients
6 c. fresh cucumbers
2 onions (into rings)
1 tsp. salt
1 tsp. celery seed
1-1/2 c sugar
1 c. white vinegar

Directions
Mix well. Put in refrigerator, let stand overnight.

Jackie's Cucumbers and Onion in Vinegar Recipe #2

Ingredients
3 cucumbers, sliced thin (6 c.)
1 red pepper (1/2 inch strips)
1 onion, sliced thin
1 tsp. salt
2 tsp. dill seed

Directions
Combine above and leave 1 to 2 hours uncovered.
Stir occasionally.

Dressing
3/4 c. sugar
1/2 c. white wine vinegar

Directions
Pour over cucumbers. Mix. Store in glass
container covered. Refrigerate.

I'm very impressed with Sharon's link in pdf format re Instant Pots and would like to save it on the Message Boards, would that be OK? http://instantpot.com/wp-content/uploads/2013/07/InstantPot-Electric-Pressure-Cooker-Recipe-Book.pdf

There hasn't been any news on or from Debbie and nothing on her Board. I did ask Chris, but she couldn't shed any light. Did I miss something?

You mentioned high electricity account, strangely enough my b/f Gina was complaining about the same thing and blames it mostly on her constant boiling water on tap installation, I'm sure that you mentioned having one too some time ago? We too have above average electricity costs, but I put it down to a gadget loving husband, two fridges, two freezers AND our electric kettle seems to be constantly on the boil - Ron is a tea Jenny!

Mary Ann's Pickled Red Eggs Recipe

Ingredients
16 hard boiled eggs, cooled and shelled
1 c Beet juice
3 c Cider vinegar
1 ts EACH, whole cloves,allspice, and peppercorns
1/2" piece ginger root

Directions
Pack the eggs in 2 quart jars. Combine beet juice, vinegar, and spices in a saucepan and simmer 10 minutes. Pour over eggs, seal, let cool and chill.

Refrigerate a few days to allow flavors to permeate the eggs. Small cooked beets may also be pickled along with the eggs.
Makes 16 eggs

Mary Ann's Pickled Eggs and Beets Recipe

Ingredients
1 can (1 lb.) beets
6 eggs, hard boiled
6 - 7 whole allspice
1/4 c. sugar
3 T. vinegar

Directions
Drain liquid from beets; to liquid add sugar, vinegar, and allspice. Heat to the boiling point. Pour over the beets and eggs. Let stand over night.

Mary Ann's Pickled Green Beans Recipe

Ingredients
1/2 c. water
1/2 c. cider or distilled vinegar
1 Tb. salt
1 clove garlic, sliced
1 tsp. dill seed
1/4 tsp. cayenne pepper
1 (9-oz.) pkg. frozen cut green beans, thawed or 9 oz. fresh whole green beans)

Directions
Combine water, vinegar, salt, garlic, dill seed and cayenne in a medium size saucepan. Bring to boiling; add green beans. Bring to boiling again; lower heat; cover and simmer 5 minutes or until nearly tender (do not overcook). Remove from heat and cool.Pack beans into a pint jar. Pour cooking liquid over. Cap tightly and refrigerate 3 days for flavor to develop. Makes 2 cups.

Mary Ann's Homemade Strawberry Jam Recipe

Ingredients
1 pt. strawberries
1 ripe peach
1 c. sugar
1 tsp. fresh lemon juice

Directions
Hull and coarsely mash strawberries. Peel and finely chop peach. Combine strawberries, peaches and sugar in a microwavable 13x7x2" dish. Let stand for 10 minutes. Microwave on high 12-14 minutes, stirring every 4 minutes. Stir in lemon juice and let cool to room temperature. Put in pint jar and refrigerate.

Freezer Strawberry Preserves Recipes

Ingredients
1 qt. strawberries (mashed; 2 c. )
4 c. sugar
3/4 c. water
1 pkg. sure jell

Directions
Mix strawberries and sugar, and let stand for 10 minutes, boil water and sure jell, stirring continuously, boil for 1 minute; Pour into strawberries and stir for 3 minutes and put into jars. Let stand for 24 hours. Put in freezer.

Pear Preserves Recipes

Ingredients
3 qt.. pears ( sliced or chopped )
3 c. water or juice
4-1/2 c. sugar
6 slices of lemon

Directions
Cook in water until tender. Make syrup of water liquid and sugar; add fruit to partly cooled syrup and bring gently to a boil; add lemon, boil rapidly until clear and tender. Let stan in syrup to cool. Reheat syrup to boil pour fruit and boiling syrup into sterilized jars. Put a cap on and screw band lightly. Process in boiling water bath 10 minutes.

Slow Cooker Apple Butter Recipe

Ingredients
1 c packed brown sugar
1/2 c honey
1/4 c apple cider
1 T ground cinnamon
1/4 tsp ground cloves
1/8 tsp ground mace
10 medium apples, peeled, cored and cut into large chunks

Directions
Combine all ingredients in a 5 quart electric slow cooker. Cover and cook on low 10 hours or until apples are very tender. Place a large fine mesh sieve over a bowl, spoon 1/3 apple mix into the sieve. Press mix through sieve using back of the spoon. Discard pulp. Repeat procedure with remaining apple mixture. Return apple mixture to the cooker. Cook, uncovered on High 1 1/2 hours or until mixture is thick, stirring occasionally. Spoon into bowl, cover and chill up to 1 week. Makes 4 Cups.

New York Pushcart Onion Sauce Recipe
this is from the 40's-50's

Ingredients
2 onions sliced 1/4 inch thick
2 Tbsp vegetable or olive oil
1/4 cup ketchup or tomato sauce
1/2 tsp ground cinnamon
dash of Tabasco sauce
dash of salt
1 cup water

Directions
In a skillet, saute onions in the oil over medium heat until golden and limp,about 7 minutes. Add in ketchup/tomato sauce. Stir till smooth. Add seasonings. Pour into water, stir. Bring to a boil and simmer uncovered until onions are tender. Spoon 2 Tbsp or more over grilled or boiled hotdog in bun.

Makes 1-1/2 cups enough for 6-8 hotdogs

Want to thank you for posting some pressure cooker recipes, I have a instant pot, it is very much like a pressure cooker, but uses less water, if any one out there has one and want to share recipes please do. If you have one you know how great this pot is, I make yogurt in it, cheese cake, soup, ribs, the list goes on. I am posting only one recipe I have, https://www.chowhound.com/recipes/pressure-cooker-cola-braised-beef-short-ribs-30305. The ribs come out so good, you think you were cooking all day. Made in pot, when done, you put under boil for about five minutes for more color, your family will love you even more for this. Thanks again and please keep any pressure cooking recipes coming. The Hero Sandwich Recipe

Ingredients
1/4 cup olive oil
1/4 cup white wine vinegar
1 t. dried Italian herb seasoning
1/2 t. crushed red pepper flakes
1/8 t. salt
1 18 in. loaf Italian bread split lengthwise
2 plum tomatoes, sliced (1 cup)
4 thin deli slices salami
4 thin deli slices provolone cheese
4 thin deli slices baked ham
8 oz. thin deli slices roasted breast of turkey
2/3 cup bottled pickled antipasta vegetables, rinsed & well drained
1 cup shredded romaine lettuce

Directions
In small bowl, mix oil, vinegar, seasoning, red pepper & salt. Brush about half mixture on
inside of top and bottom of bread. Line bottom w/tomato slices, then layer on salami, cheese, ham & turkey, sprinkling slices remaining vinegar-oil mixture as you go. Top with the vegetables, then the lettuce & cover with the top of the bread. Secure with toothpicks; slice diagonally into 6 equal pieces.

Pecan Praline Blondies Recipe
Serves: 15-18

Ingredients

For Blondies
1 cup (2 sticks) unsalted butter
2 cups brown sugar
2 eggs
1 Tbsp. vanilla extract
1/2 tsp salt
1 tsp baking powder
2 cups all-purpose flour

For Praline Icing
1/2 cup (1 stick) butter
1 cup brown sugar
1/3 Cup heavy cream
2 cups powdered sugar
1 cup chopped pecans

Directions
Preheat oven to 350 degrees F. Line a 13x9" baking pan with foil, extending the sides of the foil over the edges of the pan. Spray the foil with cooking spray and set aside.

To make the blondies: In a medium/large sauce pot, melt the butter over medium-low heat. Stir in the brown sugar until combined. Let cool for about 5-10 minutes. After it's cooled off a little, whisk in the eggs and the vanilla until combined. Lastly, whisk in the salt, baking powder and flour until a soft batter forms. Pour the batter into the prepared pan and spread into an even layer. Bake for approx. 19-22 minutes or until a toothpick inserted near the center comes out clean. Cool completely. Wipe out the sauce pot and return it to the stove. To make the praline icing: Add the butter and brown sugar to the sauce pot and bring to a boil over medium heat. Stir constantly for 2 minutes. Add in the heavy cream and bring back up to a boil. Immediately remove from the heat and cool slightly, about 10-15 minutes. Once cooled off a little bit, add in the powdered sugar. Fold in the pecans. Working quickly, spread the praline icing over the blondie base in an even layer. Refrigerate for at least 2 hours to set the icing before cutting into bars.

Old Fashioned Ice Cream Recipe

Ingredients
4 c. milk
1-1/2 c. sugar
2 T. flour
pinch of salt
6 eggs
1/2 gal. whole milk
2 T. vanilla

Directions
In a sauce pan, scald milk. In a double boiler, mix sugar, flour and salt. Add slightly beaten eggs and scalded milk to flour - sugar mix. cook over hat water 10 minutes, stirring constantly at first. when cooked, add 1/2 gallon of milk. Add vanilla. Stir and then pour into ice-cream freezer and turn until thickened.

Peach Ice Cream Recipe

Ingredients
6 lg. peaches
1-1/2 c. sugar
1/2 pt. cream
1 pt. milk

Directions
Peel and slice peaches. Mash and rub through sieve, add the sugar, set in cool place until sugar is dissolved then add cream and milk, freeze.

Easy Popsicles Recipe

Ingredients
1 pkg. unsweetened Kool-Aid (any flavor)
1 pkg. jello (same flavor as Kool-Aid)
1 c. sugar
2 c. boiling water
2 c. cold water

Directions
Mix dry ingredients. Pour in boiling water and mix until dissolved. Add cold water and stir. Pour in popsicle molds.

Strawberry Ice Cream Recipe

Ingredients
1 (10-oz.) pkg. strawberries
3 eggs
1 c. sugar
1 qt. half & half
1 tsp. vanilla
1 can Eagle Brand milk
2 cans strawberry pop

Directions
Mix strawberries, eggs, sugar and part of the half & half in blender. Mix with the remaining half & half, vanilla, milk, & pop. Freeze according to freezer directions.

Milky Way Ice Cream Recipe

Ingredients
12 (2.24 oz.) Milky Way candy bars
1 (5 oz.) can chocolate syrup
1 (14 oz.) can sweetened condensed milk
1/2 gallon milk
vanilla extract

Directions
Melt candy in microwave for 2 minutes, stirring after 1 minute. Mix together melted candy bar, chocolate syrup, condensed milk, and milk; use a blender. Pour into ice cream freezer and freeze.

Kick the Can  or Roll the Can Ice Cream Recipe

Ingredients
2 empty cans, 1 lb. & a 3 lb. with plastic lids
1-1/2 c. rock or kosher salt
20 c. (about 7 1/2 lbs.) crushed ice
1 c. heavy cream
1/3 c. any of the following:
raisins, diced peaches, crushed
Oreos, diced strawberries
1 c. milk
1 tsp. vanilla

Directions
Combine ice cream ingredients in smaller can. Cover can tightly with lid and set in the center of the larger can. Layer 1/2 the ice alternately with 1/2 the salt in the empty space between cans. Cover the larger can with lid. Roll the can back and forth 10 minutes on a hard surface. Open outer can, empty old ice and water. Lift out small can, wipe lid dry and remove. Scrape ice cream from sides with a knife. Replace in large and and re-pack with remaining ice and salt. Cover and roll about 5 more minutes or until done.

Homemade Banana Ice Cream Recipe

Ingredients
2 cans Eagle Brand sweetened condensed milk
3 bananas, cut up sm.
3 pts. half & half
Milk to finish filling 1 gallon
freezer

Directions
Mix all together. Freeze in 1 gallon freezer. May use any type of fruit mashed up or chopped small. Very rich.

Homemade Dark Chocolate Ice Cream Recipe

Ingredients
4 ounces unsweetened chocolate
1 cup milk
2 eggs
1 cup sugar
1 cup heavy cream
1 teaspoon vanilla extract
1 pinch salt

Directions
Melt chocolate in double boiler over hot (not boiling) water. Gradually whisk in milk, stir until smooth. Remove from heat and let it cool. Whisk eggs in a mixing bowl until light and fluffy. Gradually whisk in sugar, then continue whisking 1 minute, until completely blended. Add the cream, vanilla, and salt; whisk. Add the chocolate mixture; blend well. Cover, chill, and freeze according to ice cream maker's directions.

Maraschino Cherry Ice Cream Recipe

Ingredients
4 eggs, separated
1 c. sugar
1/2 c. instant nonfat dry milk
1 c. Eagle Brand milk
1/2 gal. milk
1 (8 oz.) jar maraschino cherries

Directions
Beat egg yolks in a bowl until light. Stir in sugar, dry milk, and Eagle Brand milk. Add milk and beat thoroughly. Chop cherries and add cherries and juice to egg mixture. Fold in egg whites that have been stiffly beaten. Freeze according to freezer directions.

Chocolate Milk Ice Cream Recipe

Ingredients
1 can Eagle Brand sweetened condensed milk
1 lg. Cool Whip
1 c. sugar
1/4 c. chocolate syrup
Regular chocolate milk (Ready to drink) 1/2 gal. for 5 qt. freezer

Directions
Combine chocolate milk and Eagle Brand milk with mixer. Add Cool Whip, mixing well. Add sugar and chocolate syrup and mix with mixer. Pour into freezer and use chocolate milk to fill to fill line of freezer, mixing well. Use more syrup if desired.

Pina Colada Ice Cream Recipe

Ingredients
1 (12 oz.) can crushed pineapple
1 pkg. frozen coconut
1 qt. half and half
1 pt. whipping cream
1 can Eagle Brand milk
4 eggs, beaten well (or Egg Beaters)
2 c. sugar
2 tsp. rum flavoring

Directions
Mix Eagle Brand milk, sugar and eggs in large bowl. Beat well; add cream and half and half. Add remaining ingredients. Place in ice cream freezer.
