Chocolate Drizzled Meringue Roll Recipe
Makes 8 Servings

6 egg whites
2/3 cup ground hazelnuts
6 tbs instant vanilla pudding mix
1 1/3 cups sugar

1 1/3 cups heavy cream
1 tbs sugar
1/2 tsp vanilla
10 oz can mandarin oranges, drained
2 oz bittersweet chocolate, chopped

Combine nuts and pudding mix. Line a baking pan. Heat oven to 350 degrees. Beat egg whites, add sugar, beat until stiff peaks form. Fold in nut mixture. Pipe meringue in long strips over pan until pan is covered. Bake 20 min. Cool. Cover meringue with parchment paper, place another pan on top. Flip pans. Remove top pan, peel paper from meringue. *Beat cream, sugar, and vanilla until stiff peaks form. Spread cream over meringue, top with oranges, roll up starting with a long side. Microwave chocolate on high until melted. Drizzle chocolate over meringue roll. SERVE & ENJOY.
