Cinnamon Peach Preserves Recipe

2 lbs. peaches or could use apples or pears
3 cups sugar divided (could use Splenda)
1-1/2 cups water
2 - 3inch long cinnamon sticks

Peel and quarter fruit. Make the syrup 1 1/2 ups water, sugar/Splenda and cinnamon, boil about 5 minutes. Add fruit to syrup, cook fruit for 15 minutes.Take off heat let fruit stand in syrup 1 hour. Add remaining sugar/Splenda . Bring to a boil. Cook rapidly to jelly stage on thermometer 220*-222*. Fill sterile jars. Process in boiling water bath 10 minutes. ENJOY !!
