Judy's Cookie Recipes
My family loves a cookie for an after school snack. I try and make different ones thru the year. Their favorite is oatmeal raisin cookies.

Banana Drop Cookies Recipe

Ingredients
1-1/4 c. sugar
2/3 c. shortening
1 tsp. vanilla
2 eggs
1 c. mashed bananas (3-4 medium)
2 1/4 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1 c. chopped nuts, optional
1/4 c. sugar, mixed with 1/2 tsp. cinnamon

Directions
Preheat oven to 400 degrees. In large bowl beat 1-1/4 c. sugar, shortening and vanilla until fluffy. Beat in eggs, then bananas. Combine flour, baking powder, salt and soda. Beat into mixture. Stir in nuts. Chill 30 minutes. Drop by teaspoons 2-inches apart on greased cookie sheet. Sprinkle sugar and cinnamon mixture over cookies. Bake 8 - 10 minutes until lightly browned.

Oatmeal Cookies with Raisins

Ingredients
1 box yellow cake mix (2 layer)
2 c. quick cooking oats, uncooked
1 c. sugar
1 c. vegetable oil
2 lg. eggs
1/2 c. nuts
1/2 c. raisins
1-1/2 tsp. vanilla extract

Directions
Combine cake mix, oats and sugar in a large bowl. In a separate bowl, combine oil and eggs and mix well. Add to dry ingredients, stirring well. Stir in nuts, raisins and vanilla. Drop dough by rounded teaspoons, 2-inches apart onto greased baking sheet. Bake at 350 degrees for 10 minutes or until lightly browned.

Cornflake Cookies Recipe

Ingredients
1 c. brown sugar
1 c. white sugar
1 c. shortening
3 eggs
1 c. cornflakes, crushed
2 c. oatmeal
2 c. flour
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. vanilla
raisins, nuts, coconut, or chips may be added.

Directions
Roll in balls. Press flat and bake at 375 degrees oven for 9 to 10 minutes.

Old Fashion Sugar Cookies Recipe

Ingredients
1 c. sugar
1 c. shortening
1 egg, beaten
2 c. flour
1/2 tsp. soda
1/2 tsp. cream of tartar
1/2 tsp. vanilla

Ingredients
Cream sugar and shortening. Add egg, flour, soda, cream of tartar and vanilla. Mix well. Roll into balls. Put onto ungreased cookie sheet. Press balls down with the bottom of a glass coated with sugar. Bake at 350 until light brown, about 10 minutes

Cheerio Cookies Recipe

Ingredients
4 c. Cheerios
1 c. Karo syrup, light
1 c. sugar
1 (18 oz.) jar creamy peanut butter

Directions
Bring to a boil Karo and sugar. Then quickly, add peanut butter and stir until real smooth. Pour onto Cheerios in large pan or bowl. Stir until cereal is covered. Drop by spoonfuls onto foil paper. Let cool.

Note: I have tried several brands of peanut butter but usually end up going to the base to buy American Jiffy Creamy Peanut Butter. The cookies taste better and the texture is better.

Old Fashion Cut Out Cookies Recipe

Ingredients
1 lb. butter or margarine
2 c. granulated sugar
4 eggs
1 tsp. baking power
1 tsp. baking soda
1 tsp. vanilla
6 c. flour

Directions
Cream butter and sugar. Add eggs one at a time. Add vanilla. Put baking soda in 1 teaspoon of warm water, then add to egg mixture along with baking powder and 4 cups of the flour. Mixture may be stiff. Add the rest of the flour. You may need to mix in the last two cups of flour by hand. Chill the dough. When well chilled, roll out the dough onto a floured cloth about 1/8-inch thick. Cut out shapes and place on a greased cookie sheet and bake at 350 degrees until light brown.
