Julie's Red Beet Jelly Recipe

4 c. red beet juice
1/2 c. lemon juice
1 (6-oz.) box raspberry gelatin
1 (1-3/4 oz.) box fruit pectin
6 c. sugar

Bring beet juice, lemon juice, gelatin, and fruit pectin to a boil. Boil for 3 minutes. Add sugar and boil for 5 minutes. Place in containers and seal. Makes 2-1/2 pints.
