Broiled Parmesan Potatoes Recipe

Ingredients
2 T. margarine or butter, melted
1 tsp. dried basil, crushed
1/2 tsp. paprika
1/4 tsp. garlic powder
1/8 tsp. pepper
2 med. potatoes, bias-sliced about 1/4" thick
1/4 c. grated Parmesan or Romano cheese

Directions
Stir together margarine or butter, basil, paprika, garlic powder and pepper. Place potato slices in a single layer on the unheated rack of a broiler pan. Brush margarine mixture over both sides of potato slices. Broil about 5 inches from the heat for 8 - 9 minutes or until potatoes begin to brown. Using a wide spatula, turn potatoes. Sprinkle with cheese. Broil for 4 - 6 minutes more or until potatoes aretender.
Makes 4 servings.

Sesame Potatoes Packets Recipe

Ingredients
6 potatoes
1/2 cup buttermilk
3 T. onions finely chopped
3 T. parsley
2 T. sesame seeds
1 tsp. salt

Directions
Scrub and dry potatoes, cut into 1/4 to 1/2 inch slices. Combine butter, onion, parsley, sesame seeds and salt. Dip slices of potatoes one at a time into butter and spices. Please in heavy aluminum foil. Close foil over and bake at 350 degrees for 30 minutes. Uncover and bake 1 more hour.

Onion-roasted Potatoes

Ingredients
1 envelope onion soup mix
1/3 c. olive or vegetable oil
2 lb. all purpose potatoes

Directions
Preheat oven to 450 degrees. Cut potatoes into large chunks. In large plastic bag or bowl, add potatoes, oil and soup mix. Close bag and shake, or toss in bowl, until potatoes are evenly coated. In 9 x 13-inch pan, arrange potatoes. Discard bag. Bake uncovered, stirring occasionally, 40 minutes or until potatoes are tender and golden brown.
