Patty Pan Squash Bread Recipe

Hello again everyone

My neighbor gave me some patty pan squash which I never had before. I thought maybe it would be a good substitute for zucchini and came up with this recipe. The cloves and cardamom give it a little bit different taste from traditional zucchini bread.

Patty Pan Squash Bread Recipe

2 eggs
1 cup sugar
1/2 cup vegetable oil
1 tsp vanilla extract
1/4 tsp maple extract (optional but good if you have it)
1 cup peeled and grated patty pan squash (remove seeds)
1-1/2 cups all purpose flour
1/2 tsp salt
1/2 tsp baking soda
1/4 tsp baking powder
1 tsp cinnamon
1/4 tsp ground cloves (scant)
1/4 tsp ground cardamom
1/2 cup chopped walnuts
1/3 cup raisins

Sift together all the dry ingredients and set aside. Beat eggs until light and fluffy and then gradually beat in the sugar, until very light and fluffy. Gradually add the oil and continue beating until the mixture is well combined and light. Add the squash and both extracts.

Stir in the sifted dry ingredients, walnuts and raisins. Mix lightly until well combined. Pour into a greased 9 x 5 loaf pan. Bake at 350F for one hour.
