Potato Pancakes Recipe
3/4 c pancake mix
1 c milk
1 egg; beaten
3 tb melted butter
2 c grated; peeled
1/4 c finely chopped onion
Place pancake mix and salt in a
large bowl. Add milk, egg and butter.
Stir until batter is fairly smooth. Stir
in potatoes and onions. For each
pancake, pour about 1/4 cup batter on a
lightly greased hot griddle. Bake to a
golden brown, about 4 minutes for each
side. Turn only once.
