Perfect Pumpkin Bisque Recipe
2 t. vegetable oil
2 ( 14 oz) cans fat-free
organic chicken broth
1 ( 15 oz) can
1/4 cup orange juice
1 T. bottled fresh ginger
(crushed, minced in produce section)
1/8 t. cayenne pepper
1/4 t. salt
1/2 cup heavy cream or whipping cream
minced fresh chives, sour cream, or
croutons for optional garnish
Heat oil over lw heat in 4
1/2 qt. Dutch oven. Peel & finely mince
onion and add to pot.
often,until onion begins to soften,
about 2 min. Add broth, pumpkin, juice,
ginger, pepper & salt. Stir to mix.
Bring soup to boil on high. Reduce to
low & add cream.
frequently, until ready to serve up to
30 min. Cadel into bowls, garnish. Serve
