Sharon's Oatmeal Recipes

Oatmeal Scones Recipe

Ingredients
1-1/4 c. plus 1T. flour
1-1/2 tsp. cream of tartar
1 tsp. baking soda
1/2 tsp. salt
3/4 oz. uncooked quick oats
1/4 c. margarine
1/4 c. skim milk
2 tsp. molasses

Directions
Mix first 4 ingredients and oats. With pasty blender, cut margarine until coarse meal. Add milk and molasses. Knead dough. Roll to form 10" circle. Cut into 8 wedges. Bake 5 minutes. Using pancake turner, turn scones over and bake until golden brown. About 5 min. more.

Zucchini Oatmeal Muffins Recipe

Ingredients
2-1/2 c. flour
1-1/2 c. sugar
1 c. chopped nuts
1/2 c. quick oats, uncooked
1 T. baking powder
1 tsp. cinnamon
1 tsp. salt
4 eggs
3/4 c. oil
10 oz. shredded zucchini

Directions
Mix together flour, sugar, oats, nuts, baking powder, salt and cinnamon. Add oil and eggs and blend together with fork. Blend in zucchini until moistened. Batter will be lumpy. Measured into lined muffin pans. Bake at 400 degrees for 20 minutes.
Yield: 18 to 24 muffins
