Sharon's Oatmeal Recipes
My supermarket had oatmeal on sale this week. I looked up my tried and tested recipes to use up the oatmeal. Thought others might like the recipes as well.

Apple Oatmeal Cookies Recipe

Ingredients
1 c. all-purpose flour
1 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. salt
1/2 tsp. ground nutmeg
1/2 c. shortening
3/4 c. white sugar
2 eggs
1 c. rolled oats
1 c. diced apple without peel
1 c. walnuts, chopped

Directions
Preheat oven to 350 degrees. Combine the flour, baking powder, cinnamon, nutmeg and salt.In a large bowl, cream the shortening and sugar. Beat in the eggs until well blended.Slowly add the dry ingredients. Mix well. Fold in the walnuts, oats and apples. Drop by spoonfuls about 2 inches apart and bake for 12 to 15 minutes. Let cool on wire racks.
Makes 3 dozen.

Baked Oatmeal Recipe

Ingredients
1 c. butter
2 c. sugar
4 eggs
2 T. baking powder
6 c. oatmeal
1 tsp. salt
2 c. milk
brown sugar
cinnamon

Directions
Mix all together. Place in a lightly greased 9 x 13-inch pan. Sprinkle brown sugar and cinnamon on top according to taste. Bake 350 degrees for 25-30 minutes. It will have the consistency of a crumbly coffee cake and is delicious.

Chocolate Chip Oatmeal Cookies Recipe

Ingredients
1 c. shortening
1 c. brown sugar
1 c. white sugar
2 eggs
2 c. flour
1/4 c. water
1 tsp. soda
1/2 tsp. salt
2 c. oatmeal
1 lg. pkg. chocolate chips pr peanut butter chips

Directions
Cream together shortening, brown and white sugars; add eggs, then flour alternately with water. (Soda and salt may be added to flour.) Beat until smooth. Fold into mixture the 2 c. of oatmeal and chocolate or peanut butter chips. May need 1/4 c. more of oatmeal. Bake at 325 degrees for 10 to 12 minutes.

Mock Pecan Pie

1/4 c. butter or margarine
1/2 c. sugar
1 c. dark Karo syrup
1/4 tsp. salt
3 eggs
1/2 c. coconut
1/2 c. oatmeal
1 (9") pie shell

Directions
Beat the eggs. Add butter, sugar, syrup, and salt. Mix well. Then add coconut and oatmeal. Mix well. Pour into pie shell and bake at 350 directions for 50 minutes.

Oatmeal Bread Recipe

Ingredients
2 c. hot water
1/4 c. brown sugar or molasses
3-1/2 tsp. shortening
2-1/2 tsp. salt
1 tsp. sugar
1/2 c. lukewarm water
1 pkg. dry yeast
1/2 c. dry milk
3-1/2-4 c. flour (approximately)

Directions
Pour hot water over sugar, shortening, salt and rolled oats in a large bowl. Stir only until moistened. Cool to lukewarm. Add sugar to the lukewarm water, sprinkle yeast over the top and let stand 5-10 minutes. Add yeast mixture to the lukewarm oatmeal mixture. Add 1/2 of the sifted flour to which dry milk has been added, and beat until smooth. Add remaining flour a little at a time until a soft dough is formed. Knead. Let dough rise double. Punch down. Shape into 2 loaves. Put in greased pans; raise double. Bake at 375 degrees for 55 minutes if using metal pans, 350 degrees if glass pans are used.

Oatmeal Pancakes Recipe

Ingredients
1-3/4 c. buttermilk
1 c. quick-cooking rolled oats
2 T. sugar
1 tsp. baking soda
1/2 tsp. salt
1/4 c. vegetable oil
2 eggs, beaten

Directions
In a large bowl, mix buttermilk and oats. Let stand for three minutes. Meanwhile, in a small bowl, mix flour, sugar, baking soda and salt; set aside. Beat oil and eggs into oat mixture. Stir in flour mixture until well blended. Heat a heavy skillet or griddle over medium heat. Grease lightly. Using 1/4 cup batter for each pancake, cook until bottoms are browned and edges are dry. Turn and cook until second sides are browned. Keep hot in a warm oven.

Strawberry Rhubarb Crisp Recipe

Ingredients
2 c. rhubarb 1/2" thick
1 pt. strawberries
3 T. cornstarch
1 c. brown sugar
1-1/2 c. quick cooking oatmeal
1/2 c. wholewheat flour
1 tsp. cinnamon
1/2 c. melted butter

Directions
In a 8 x 8 x 2 inch pan stir together rhubarb and strawberries. In a small bowl stir together cornstarch and 1/2 cup brown sugar add to rhubarb-strawberry mixture. In a medium bowl stir together the remaining 1/2 cup brown sugar, flour and cinnamon, stir in butter sprinkle over mixture. Bake 350 degrees for 1 hour. Serve hot with vanilla ice cream or topping.

Rasberry Crisp Recipe

Ingredients
1 qt. fresh raspberries, blackberries, or dewberries
1/3 c. white sugar
1/4 c. butter
1/3 c. flour
1/3 c. brown sugar
3/4 c. oatmeal

Directions
Put berries in bottom of 9-inch square baking dish. Sprinkle with white sugar. Combine butter, flour, brown sugar and oatmeal. Mix together until dough resembles coarse crumbs. Sprinkle flour mixture over fruit. Bake at 350 degrees for 30 minutes or until lightly browned. Serve warm or chilled, with light cream, custard sauce, or ice cream.
