Shepherd's Pie Recipe


















I have been making various versions of this for over 50 years. It is a great family meal that you can serve with salad, various other veggies, crusty bread or just on its own. Hubby and I always preferred the lamb version whereas our lads always preferred the beef version, I compromise these days be using a combination of both when they are coming for dinner, although our youngest, Nicholas, seems to be veering towards the lamb version. A version of this recipe is available from Gordon Ramsey, a rather outspoken Scottish Chef who uses a lot of colourful language. I always overdo the cheese topping - well just because I prefer it that way and it's a good way of using up all those little chunks that you have been saving for later.

Shepherd's Pie (if you use Lamb/called Cottage Pie if you use Beef)

Ingredients:
1-1/2 lbs ground beef (or lamb)
1/2 large onion, diced (about 1/2 cup)
1/2 medium zucchini, grated
3 cloves garlic, finely minced
1 1/2 tbsp Worcestershire sauce
2 tbsp tomato paste
1 tsp fresh thyme (or 1/2 tsp dried)
2 cups beef/lamb broth
2 tsp salt, or to taste
1 cup frozen carrots (not thawed)
1 cup frozen peas (not thawed)
3 cups mashed potatoes
1/4 cup cheddar cheese, finely grated
couple shakes of Parmesan cheese

Instructions:
1.In a large skillet, brown the beef until no longer pink. Drain off excess grease. Add onion, garlic, and zucchini and saute for 3-5 minutes.
2.Add carrots and peas and stir together.
3.Add Worcestershire sauce and tomato paste. Season with thyme and cook for about 1 minute.
4.Add broth and simmer for 10-15 minutes or until sauce has thickened. Taste and adjust seasoning.
5.Transfer meat mixture to a deep casserole dish. You can use an 88 square pan, a casserole or you can make individual servings.
6.Spoon mashed potato on top of meat. Sprinkle with grated Parmesan cheese and cheddar cheese. Place the dish on a cookie sheet in case it bubbles over while baking.
7.Bake in a 375 F oven for 20 minutes or until top is brown and heated through. The sides may be bubbly. Garnish with chopped scallions.
