Shrimp Wiggle Recipe

Shrimp Wiggle Recipe
(wiggle refers to anything which can be done in a hurry)

2 T. unsalted butter
1-1/2 cups finely chopped red pepper
4 oz. fresh mushrooms, sliced ( 1 1/2 cups)
1 lb. large shrimp 9 about 20) thawed if frozen, peeled, deveined with
tails removed ( strongly suggest buying USA shrimp and not from Indonesia or Thailand)
2 T. flour
1 t. paprika
1 1/2 cups low fat milk
1 cup frozen peas, thawed & drained
1/2 t. salt ( I use sea salt)
1/4 t. black pepper( I use whole ground organic pepper)
4 slices whole wheat toast, cut diagonally into 2 triangles

In a 12 in. nonstick skillet, melt 1 T. butter over moderately hi heat. Add red pepper & mushrooms and sauté for 5 min. Using slotted spoon, transfer to plate. Add shrimp to skillet & cook, stirring, for 3 min. or until just pink & opaque. Transfer to plate w/vegetables.Melt remaining 1 T. butter in skillet. Stir in flour & paprika & cook until bubbly. Whisk in milk & cook, stirring constantly, 3 min. longer or until the sauce thickens.

Stir in the peas, salt, black pepper, vegetables, and shrimp and heat through. Ladle over toast points, & serve w/ Caesar Salad.
