Cranberry Jell-O Salad Recipe



Yesterday Yahoo Groups was not accessible. When trying to send a message out that no newsletter was being posted. until there more recipes and messages came into the inbox, it was not possible. I gave up at 11:45pm to try send the message. I am sorry if this was an inconvenience to anyone.

Today's newsletter are recipes that were orginally in 2003-2007 newsletters. All recipes are favorite ones that have been accessed the most often on nancyskitchen.com during the holiday seasons.

Holiday Pretzel Candy Recipe

1-1/2 c Broken pretzel sticks
1-1/2 c Nuts; chopped
1 lb white almond bark

Break pretzels into thirds, add nuts. Melt chocolate according to package directions. Pour chocolate over pretzels and nuts, stirring to cover all. Drop by spoonfuls onto wax paper on cookie sheet.
Refrigerate about 10 minutes.

Pecan Fudge Recipe

Ingredients
1 lb Confectioner's sugar
6 tb Butter
1/2 c Cocoa
1/4 c Milk
1 tb Vanilla
1/4 ts Salt
1 c Pecans, chopped

Directions
In medium saucepan, heat sugar, butter, cocoa, milk, vanilla and salt overlow heat, stirring until smooth. Stir in nuts. Spread mixture quickly in buttered 9 x 5 loaf pan.
Cool; cut into squares.
Makes 2 dozen.

Microwave Pecan Brittle Recipe

Ingredients
1 c Pecan halves
1 c Sugar
1/2 c Light corn syrup
1/8 ts Salt
1 ts Butter
1 ts Vanilla
1 ts Baking soda

Directions
Stir pecans, sugar, syrup, and salt together in a 1-1/2 quart glass bowl. Microwave on HIGH 7 to 8 minutes, stirring well after 4 minutes. At the end of 8 minutes, add butter and vanilla. Blend well. Return to microwave and cook on HIGH 1 to 2 minutes more. Remove and add baking soda and gently stir until mixture is light and foamy. Pour onto lightly greased cookie sheet and let cool 30 minutes to 1 hour.
Break into pieces and store in airtight container.

Pecan Roll Recipe

Ingredients
2 c sugar
1/2 c white corn syrup
1 1/2 c Pecans
1 c Light brown sugar
1 c Cream

Directions
Boil cream, sugar, and syrup to soft ball stage (234 - 238 F). Cool to room temperature. Beat until creamy. Turn onto board dusted with powdered sugar. Knead until firm. Shape into a roll, and cover outside with pecan meats. Put in cool place to harden. Slice when firm, using a sharp knife. Finely chopped pecan meats may be worked through the candy while it is being kneaded if desired.

Sugared Pecans Recipe

Ingredipecans
3 ts cinnamon
1 ds salt
1/2 c water
1 c sugar

Directions
Combine the sugar and water. Cook to a soft ball, then add the cinnamon and salt, mix well; - then add your pecans. Stir until it hardens.
Pour out and let cool.

Peanut Clusters Recipe

Ingredients
1 egg white
1/4 c sugar
3/4 c raisins
3/4 c peanuts
3/4 c real chocolate chips

Beat egg white till frothy, add sugar gradually; continue beating till light. Stir in raisins, peanuts and chocolate chips. Place in mounds on cookie sheet lined with parchment (or buttered and floured). Bake in preheated 375F oven 8 to 10 minutes or till browned. Cool.
Makes: 24 candies

Peanut Patties Recipe

Ingredients
2-1/4 c sugar
1 c milk
2/3 c vanilla
3 c raw peanuts
1 tb butter

Directions
Combine sugar, milk, Karo and peanuts together; bring to a boil. Cook on low heat for 1 hour and 10 minutes, stirring occasionally. Remove from heat; add butter, vanilla. Beat until thick and holds shape. Drop from spoon onto greased waxed paper.
Makes 50 patties

Coconut Creams Candy Recipe

Ingredients
3/4 c cocoa
2/3 c Eagle brand milk
2 ts vanilla
2 c Icing sugar
1 c Coarsely cut walnuts

Sift cocoa and sugar to-gether, take out 1/4 cup to roll creams in. To milk add vanilla, cocoa and sugar, blend well and add nuts. Shape into small balls and roll in reserved cocoa & sugar mixture.

Cream Caramel Candy Recipe

Ingredients
2 c Sugar
Salt; pinch of
2 c White corn syrup
1/2 c Butter
2 c Evaporated milk
1 ts Vanilla

Directions
Place layer of chopped pecans in buttered jelly roll pans, set aside. Boil sugar, salt, and corn syrup, stirring occasionally. Add butter and milk gradually so that the mixture does not stop boiling at any time. Stir constantly and cook rapidly to firm ball stage. Stir in vanilla. Pour into jelly roll pans on top of chopped pecans.

Cool thoroughly and cut into squares. Twist wrap in small squares of wax paper.

Mashed Potato Fudge Recipe

Ingredients
3 oz unsweetened chocolate
3 tb butter or regular margarine
1/3 c unseasoned mashed potatoes
1 ts Vanilla
1 ds Salt
1 lb Confectioners sugar
1 ts To 2 ts milk
Flaked coconut
Chopped walnuts

Directions
Melt chocolate and butter in saucepan over low heat. Remove from heat. Add mashed potatoes, vanilla and salt. Mix well. Sift confectioners sugar into large bowl. Add chocolate mixture, mixing well. Mixture will be crumbly. Add 1-2 tsp milk, if necessary, to make a mixture that can be kneaded. Turn out on board and knead until smooth. Shape mixture into two rolls, 12 inches long and 1-1/4 inch in diameter. Roll in coconut or walnuts. Cut into 1/2 inch thick slices.
Makes 48 pieces.

Maple Cream Candy Recipe

Ingredients
2 c Brown sugar
1/2 c Cream
3 tb Butter

Stir all together. Boil until it drops from spoon. Add vanilla. Beat until it thickens.

Burnt Sugar Candy Recipe

Ingredients
1 c evaporated milk
1/2 butter
3 c sugar
1 ts vanilla
3/4 c nuts

Directions
Mix milk, butter and 2 cups sugar in saucepan, heating to boiling point. Melt 1 cup sugar in saucepan stirring constantly. Cook to soft ball stage. Add vanilla and nuts; beat until very firm. Pour into buttered 9- inch square pan.
Yield: 40 pieces.

Candied Cranberries Recipe

Ingredients
1 c sugar
2 tb water
1/2 c cranberries

Ingredients
Cook 1/2 cup sugar and 2 tablespoons water in heavy small saucepan over low heat, stirring until sugar dissolves. Transfer to top of double boiler. Add cranberries. Cover berry mixture and place over simmering water. Cook 45 minutes, stirring occasionally. Remove from over water. Let cranberry mixture stand at room temperature overnight.

Place remaining 1/2 cup sugar on plate. Drain cranberries well. Add t sugar and turn to coat. Let dry at least 30 minutes. (Can be prepared 3 days ahead. Cover and refrigerate.)
Makes about 1/2 cup

Chow Mein Candy Clusters Recipe

Ingredients
12 oz Butterscotch Morsels
3 oz Chow Mein Noodles
2 c Salted Peanuts

Melt butterscotch bits in top of double boiler. Remove from heat and immediatesly stir in chow mein noodles until all are coated then quickly stir in peanuts. Drop on wax paper with tablespoon. Let cool until firm.
Makes about 2 dozen.

Pinto Bean Fudge Candy Recipe

Ingredients
2/3 c canned milk (or light cream)
1-1/2 c mini marshmallows
1-1/2 c strained pinto beans
1 ts vanilla
1-2/3 c sugar
1/2 c nuts
1-1/2 c chocolate chips

Combine sugar and milk in kettle. Boil 5 minutes, stirring constantly. Add remaining ingredients and stir until marshmallows melt. Pour into buttered pan; cool and cut into squares.

Hot Chocolate Eggnog Recipe

Ingredients
1 egg
3/4 c milk
1/2 c water
3 tb unsweetened cocoa powder
1/2 ts ground nutmeg

Directions
In container of electric blender of food processor, combine egg, milk, water, cocoa and nutmeg, blend until well mixed. Transfer mixture to top of a double boiler. Hear stirring occasionally, until mixture is steaming. Do not boil. Serve immediately.
Makes 1.5 cups

Christmas Holly Cookies Recipe

Ingredients
1 stick margarine
30 lg marshmallows
1 ts green food coloring; to make dark green
4-1/2 c corn flakes

Directions
Melt together margarine and marshmallows. Add 1- 1 1/2 teaspoon of food coloring. Add cornflakes. Drop by spoonful on waxed paper. Sprinkle with sprinkles and/or decorate with red hots.
Let dry.

Marshmallow Popcorn Christmas Tree Recipe

Ingredients
12 c popped popcorn
1/2 c margarine or butter
3 c mini marshmallows
1/2 pk lime flavored jello
Green food color
Candy pieces to decorate tree

Directions
Spread popcorn evenly in jelly-roll pan or on waxed paper-lined counter. In medium saucepan, combine margarine and marshmallows; cook over medium heat until melted. Add jello; continue to cook until jello is dissolved. Add food color and mix well. Pour evenly over popcorn; stir quickly to coat. With dampened hands, shape popcorn into cone shape.
Decorate tree with candy pieces.

Cranberry Jell-O Salad Recipe

Ingredients
2 pk (4-serving-size) sugar-free cranberry jello; divided
2 c boiling water; divided
1 c cranberry juice
1 cn 1-lb can whole-berry cranberry sauce
1 c sour cream
1/4 c chopped walnuts

Directions
Place 1 package gelatin in large bowl and stir in 1 cup boiling water until gelatin is dissolved. Add cranberry juice. Cool about 15 minutes, then add cranberry sauce. Pour mixture into a 13-by-9-by-2-inch baking dish and let set until firm in the refrigerator.

In a small bowl, combine remaining package of gelatin and remaining 1 cup boiling water; stir until gelatin is dissolved. Let cool about 15 minutes, then add sour cream and walnuts.

When first layer is firm, spread second layer on top and refrigerate until set, at least 1 hour. Cut into squares before serving.
Makes 8 to 10 servings.
