Here are a few favorite recipes


My Baked Stuffed Shrimp Recipe

Ingredients
17-18 large shrimp
1 1/2 sticks butter or margarine ( butter gives more flavor)
1 tblspn garlic powder
1 sleeve Ritz crackers crushed
1/2 cup Italian flavored bread crumbs
handful of Parmasian cheese ( your preference)

Directions
Melt butter , add to crackers and breadcrumbs; add garlic powder and cheese; mix with fork. Place shrimp in round cake type pan . Place shrimp in circle in pan . With spoon place mixture on top of each shrimp . Place on bottom shelf of preheated 350 degree oven . cook for 20 min. approx. Do not over-cook .

Favorite Meat Loaf Recipe

Ingredients
2 Tblspn butter
1/2 cup chopped onion
1/4 cup chopped green bell pepper
2 lbs ground beef
3/4 cup rolled oats
2 eggs slightly beaten
1/2 cup tomato juice
2 1/2 tsp salt
2 tsp paprika
1 tsp dry mustard
2-3 Tblspn horseradish (optional)
1/2 cup ketchup

Directions
Melt butter in skillet over med. - low heat; sauce onion and green pepper approx 5-7 min. Combine remaining ingredients, except ketchup in mixing bowl. Add onion and pepper . Mix until blended. Pack in greased loaf pan . Spread ketchup over top. Bake 375 degrees for 1 hour . Serves 8 . ( I usually half this recipe )

Balsamic Chicken Recipe

Ingredients
4 Chicken breast halves -bone in
1/4 cup balsamic vinegar
1 Tbl olive oil
1 1/2 teaspoon dried oregano
1 tsp kosher salt
1/2 tsp ground black pepper (chopped garlic and sliced onion -optional )

Directions
Preheat oven 400 degrees. Arrange chicken bone side down in glass or ceramic dish . Pour the vinegar over them and sprinkle with the oil, oregano, salt and pepper . I add chopped garlic and sliced onion to this dish . Bake 20 min. and baste with the vinegar juices. Bake 20 min more or until juices run clear . Serve chicken with juices spooned over them.
This is a great recipe.
