Clam Chowder Recipe

Top O' The Bay is a local restaurant and this is their recipe for Clam Chowder . It makes a LOT , ( 2 gallons ) so I usually cut this recipe in half . You do not have to be exact in your measurements.

2 to 4 slices bacon ( I like a lot of bacon flavor in my chowder)
2 large onions chopped
1 celery diced
1 Tblspn black pepper
1 Tblspn garlic chopped fine
`1Tblspn basil
1 tsp oregano
2 gallons clam juice
1 28 oz tomato puree
1/2 gal. chopped clams
2 (or more potatoes chopped small -optional ( we don't like a lot of potatoes in our chowder )
2 sleeves ritz crackers crushed

Dice and sauce bacon. Add onions and celery and continue to cook . Season with garlic , black pepper , basil, and oregano . Add clam juice and tomato puree and chopped potatoes if using . Simmer and test the potatoes for doneness. When it starts to lightly boil add chopped clams. When it comes to second boil add 2 sleeves of ritz crackers to thicken . Enjoy ! We love this recipe with our local clam cakes .
