Here are more great recipes for the gill. You can use any of your favorite vegetables in the recipes, such as asparagus, eggplant, green beans, and butternut squash.

Grilled Spiced apples and Sweet Potatoes Recipe

Ingredients
2 (18 oz.) cans sweet potatoes, drained
1/2 c. apple butter
1/4 c. packed brown sugar
2 tbsp. water
1/2 tsp. ground cinnamon
2 tbsp. butter

Directions
Cut 2 large pieces of heavy duty foil. Place half of sweet potatoes on each. Mix together apple butter, brown sugar, water and cinnamon. Spoon over potatoes. Dot with butter. Fold in sides of foil and seal well. Grill, seam side up 15 to 20 minutes or until heated through. Makes about 12 side dish servings. Note: Can substitute fresh cooked sweet potatoes or fresh, peeled sweet potatoes slices/chunks. Will need to increase the grilling time if use uncooked sweet potatoes.

Grilled Sweet Potatoes, Prunes and Carrots Recipe

Ingredients
3 c. sliced, cooked sweet potatoes
2 c. cooked, sliced carrots
2 c. cooked prunes
1 tbsp. minced lemon zest
Juice of 1 lemon
Salt to taste
1/4 c. honey
1/4 c. vegetable oil

Directions
Make a double heavy duty foil pocket about 4 x 8 x 2 inches or buy a foil pan about this size. Layer potatoes, carrots, and prunes in the foil, dotting each layer with lemon zest, lemon juice, and salt. Combine honey and oil; pour over all. Close the pocket or cover pan with foil. Place in the grill about 6 inches over heat. Close the grill cover and cook tins for about 20 minutes or until heated through. Also can be cooked in regular oven.

Grilled Foil Roasted Vegetables Recipe

Ingredients
Chopped Cauliflower
Sliced Mushrooms
Sliced Carrots
Sliced Squash
Sliced Zucchini
Snow peas
Sliced Onion
Sliced peeled Potatoes
Chopped Green, Red, or Yellow pepper
Chopped Broccoli
1 stick butter or 1/2 cup olive oil
Salt & pepper to taste
Other spices of your choice

Directions
Use fresh vegetables only. In large bowl combine vegetables and pour melted butter or olive oil over the mixture, along with any spices. Make a sealed pouch from 2 large pieces of foil. Leave one end open. Put ingredients in and seal. Cook on medium heat for 15 minutes. Turn and cook 15 minutes more. Take from grill, place pouch in deep pan before opening.
I make this for large family cook-outs, but recipe can be adjusted to the amount you need.

Grilled Mixed Vegetables Recipe

Ingredients
2 med. zucchini, sliced into 1/4 inch slices
2 tomatoes, sliced
1 med. onion, thinly sliced
4 tsp. butter, melted or olive oil
4 tsp. Parmesan cheese
1/4 tsp. thyme
1/4 tsp. rosemary
1/4 tsp. pepper
1/8 tsp. oregano
Bread crumbs

Directions
Tear off 4 large squares of double thick foil and place 1/4 of vegetables in middle of each. Melt butter, add cheese and seasonings. Pour 1/4 of mixture over vegetables in each package. Sprinkle with bread crumbs and seal foil edges tightly. Grill over medium hot coals about 15 minutes. Turn over and cook 20 minutes more or until soft. Serves 4
