The weather has been warm and sunny. My husband wanted to use the grill to
make a new pork chop recipe a friend gave him. It was wonderful.
Grilled Chops Recipe
1/4 c. light brown sugar,
1/4 c apple juice
2 T. vegetable oil
1 T. soy sauce
1/2 tsp. ground ginger
salt and freshly ground black pepper, to taste
1/4 c. water
1 tsp. cornstarch
6 boneless loin pork chops, each about
4-oz. and 1/2-in. thick
Start fire in grill, placing
rack about 6 inches above coals. When coals are almost ready, in 2-quart
saucepan combine brown sugar, apple juice, oil, soy sauce, ginger, salt and
pepper; bring to boil over medium-high heat, stirring until sugar dissolves.
In small bowl stir 1/4 c. water into cornstarch to dissolve, add to mixture
in saucepan. Return to boil, stirring; when mixture slightly thickened,
remove from heat. Grill pork chops over hot coals 10 to 12 minutes, turning
once. Brush with sauce; grill 5 minutes longer until pork is well glazed and
cooked through, turning once more and brushing with sauce.
