Pie Crust Recipe

2 and 1/4 cups all per pose flour
1/2 cup of vegetable oil plus 1 Tablespoon
1/3 cup milk
Pinch salt

Put flour in mixing bowl. Pour oil in measuring cup and add milk. do not stir. Pour onto flour and mix gently. Dough will clean the bowl,, divide in half. Roll between wax paper. Makes two crusts.

For the past several days Ditto has wanted to spend most of his time in the garage. I didn't think anything about it until yesterday when he pulled his old bed out the the garage. I kept an eye on him and today when he wouldn't come in from the garage and he pretended he was asleep in his bed. I suspected he was hiding something from me. (In the past he has been guilty of hiding unopened small cans of tuna, pencils, pens, a spoon, rolls of toliet paper and my keys.) He looked gulty so I picked him up to find a small field mouse in his bed. I am assuming that Ditto was hiding the mouse from Little One. I have great mousers at my house but they hunt down mice for different reasons. Little One kills them and Ditto hids them.

The field mouse crawled into a and was secured in a box and was relocated in a field several blocks down the street.

Lemon Pork Chops Recipe

6 ounces fresh lemon juice
1/2 cup basil leaves, cut into thin strips
4 tablespoons olive oil
1 or 2 cloves garlic, crushed
4 loin pork chops, at least 1 inch thick

Mix the first four ingredients. Pour the marinade over the pork chops, and refrigerate them for 2 hours, turning once in the process. Broil them for approximately 10 to 15 minutes per side, turning them once and basting them. Serve with the melon wedges and rice.
Makes 4 Servings

Honey Lime Chicken Recipe

1-1/2 ounces key lime juice
2 tablespoons honey
1/2 teaspoon salt
1/2 teaspoon ground hot red pepper
1 pound chicken pieces

Combine all ingredients and brush chicken. Bake at 450F for 25 to 30 minutes. Turn and baste with pan juices every 10 minutes. Broil chicken 3 to 4 minutes or until browned. Serve with rice.
Serves 4.

Jack Daniels BBQ Sauce Recipe

1 tablespoon shallots, minced
1 teaspoon garlic, minced
1/2 bottle Worcestershire sauce
2 ounces Jack Daniels whiskey
4 ounces cold butter
1 teaspoon parsley, chopped
pinch black pepper

Saute shallots and garlic in Worcestershire sauce. Reduce by half. Add black pepper and whiskey. Flame. Off of heat, whisk in butter; add parsley. Use on grilled steaks and tenderloin.

Tater Tot Casserole Recipe

1 pound ground beef
1 medium onion, diced
1 10 ounce package frozen green beans, thawed
1 14 ounce can chicken gumbo soup
1 14 ounce can chicken rice soup
1 14 ounce can cream of mushroom soup
1 32 ounce bag tater tots

Preheat oven to 350F. In a skillet, over medium heat, sauté onion and ground beef until turkey is browned. Drain and place on the bottom of an oven proof casserole dish. Layer green beans over beef. In a small bowl combine the soups and pour over green beans. Top with tater tots and bake for 30 to 45 minutes.
Serves 4-6

Cherry Tomato Pasta Salad Recipe

2 pounds ripe cherry tomatoes, stemmed and cut into quarters
1/2 cup fresh basil, torn
1 clove garlic, minced
1/4 cup extra virgin olive oil
1 tablespoon balsamic vinegar
1 teaspoon sea salt
1 pound dried pasta, such as conchiglie, penne, fusilli

In large bowl, combine tomatoes, basil, garlic, olive oil, vinegar and salt. Cover with plastic wrap and let marinate at least 1 hour or up to 2 hours at room temperature. In large pot of salted water, cook pasta according to directions. Drain and rinse under cold water. Set aside until dry. Add pasta to tomato mixture and toss to combine. Serve at room temperature. Makes 4 to 6 servings.

Crock Pot Pepper Jack Chicken Recipe

4 to 6 chicken breast halves, boneless, without skin
bell pepper strips, use fresh or frozen pepper stir fry pepper strip combo
1 can Pepper Jack cheese soup, undiluted
1/4 cup water
3 tablespoons chunky salsa

Combine all ingredients. Cover and cook on low for 5 to 6 hours, until chicken is tender. Serves 4 to 6.

Note: I had trouble finding the pepper jack cheese soup so I tried cream of celery and stirred in some thinly sliced pepper jack cheese to the mixture.

Crock Pot Cola Chicken Recipe

1 chicken, cut up (or favorite chicken pieces)
1 onion, chopped
10 ounces Coke
1 small bottle ketchup
3 tablespoons brown sugar
1/2 teaspoon salt
1/4 teaspoon pepper

Put in crockpot in order listed. Stir once. Cook on low for 6 to 8 hours.

Crock Pot Chicken Alfredo Recipe

1-1/4 pounds boneless, skinless chicken thighs
1 onion, chopped
1/2 cup roasted red bell pepper strips
16 ounce jar alfredo sauce
3 cups frozen broccoli
9 ounce package refrigerated fettuccine, cooked and drained
3 tablespoons grated Parmesan cheese

In a 4 quart crockpot, place chicken, onions and red bell pepper. Pour alfredo sauce over. Cover crockpot and cook on low for 5 to 6 hours. Thaw and drain broccoli and add to crockpot. Stir, cover crockpot and cook on high for 20 minutes. Stir cooked fettuccine into crockpot before serving and sprinkle with cheese.
5 servings.

Sue's Carrot Spice Muffins Recipe

1 1/2 c. flour
1/2 c. unprocessed bran
1 tsp. salt
1 tsp. cinnamon
3/4 tsp. soda
1/4 tsp. baking powder
1/4 tsp. allspice
1 c. shredded carrots (about 3)
2/3 c. orange juice
1/3 c. raisins
1/4 c. vegetable oil
1/4 c. firmly packed brown sugar
1 egg

Heat oven to 425 degrees. Grease 10 medium muffin cups or line with paper liners. In large bowl, combine flour, bran, salt, cinnamon, soda, baking powder and allspice; mix well. Combine remaining ingredients; add to bran mixture, mixing just until dry ingredients are moistened. Fill prepared muffin cups 2/3 full. Let stand for 5 minutes. Bake for 20-25 minutes or until golden brown. Yields 10 muffins.

Sausage Cheese Biscuits Recipe

These breakfast-in-a-biscuit goodies will appeal to the young...and the young at heart. It's one of my favorite recipes because it doesn't require any special ingredients.

1 tube (12 ounces) refrigerated buttermilk biscuits
1 package (8 ounces) frozen fully cooked breakfast sausage links, thawed
2 eggs, beaten
1/2 cup shredded cheddar cheese
3 tablespoons chopped green onions

1.Preheat oven to 400°. Roll out each
biscuit into a 5-in. circle; place each in an ungreased muffin cup. Cut sausages into fourths; brown in a skillet. Drain. Divide sausages among cups.

2.In a small bowl, combine eggs, cheese and onions; spoon into cups. Bake 13-15 minutes or until browned.
