Mary J's Banana Cookies Recipe

Ingredients
2 ripe, med. bananas
1-1/2 c. all-purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1-1/2 c. firmly packed light brown sugar
3/4 c. margarine, softened (1-1/2 sticks)
1 egg
1/2 c. light dairy sour cream
1 tsp. vanilla extract
1 1/2 c. rolled oats, uncooked
1 c. golden raisins (Dole)
3/4 c. almonds, toasted and chopped

Directions
Place bananas in blender. Process until pureed; use 1 cup for recipe. In small bowl, combine flour, baking soda, salt and spices. In large bowl, beat brown sugar and margarine until light and fluffy. Beat in 1 cup pureed bananas, egg, sour cream and vanilla. Beat in flour mixture until well blended. Stir in oats, raisins, and almonds. Cover and refrigerate dough 1 hour to firm. Preheat oven to 350 degrees. Drop dough by heaping tablespoons 2 inches apart onto ungreased cookie sheet. Bake 15 to 20 minutes or until cookies are slightly browned around the edges. Cool on wire rack.
Makes about 4 dozen cookies.
