Mexican Casserole Recipe

1 lb. ground beef
1 pkg. taco seasoning mix
1 can (14.5 oz.) whole tomatoes, chopped and undrained
1 can (8.5 oz.) whole kernel corn, drained
1 egg
2/3 c. milk
1 pkg. Mexican Cornbread mix

Preheat oven to 400 degrees. Grease a shallow 2-quart baking dish. Brown ground beef in a large skillet and drain. Return ground beef to skillet and add taco seasoning mix, tomatoes, and corn. Bring to boil over medium heat, stirring occasionally. Pour into greased casserole dish. Beat egg in small mixing bowl. Add milk and cornbread mix; stir until smooth. Pour batter over ground beef mixture. Bake 25 to 30 minutes or until golden brown. Cool 10 minutes before serving.
