Oma's Carrot Cake Recipe

Ingredients
2 c. sugar
4 eggs, beaten
1 tsp. cinnamon
1 1/2 c. Mazola oil
2 1/2 c. flour
2 tsp. baking soda
2 c. finely grated carrot
1/2 c. nuts
1 tsp. salt
1 c. raisins, optional

Directions
Combine sugar and oil, add eggs and beat well. Mix in flour, baking soda, salt and cinnamon. Slowly mix in carrots, then raisins and nuts. Bake 40 - 60 minutes at 300 degrees. Frosting: Cream butter and cream cheese; add vanilla, mix until light and fluffy. Gradually add sugar, mix until smooth.
