St. Patrick's Day Cake Recipe

1 pkg. yellow cake mix
2 pkg. (3.5 oz.) pistachio instant pudding mix
4 eggs
1 c. club soda
1/4 c. salad oil
1/2 c. chopped nuts
1-1/2 c. cold milk
1 envelope whipped topping mix
green maraschino cherries

Preheat oven to 350 degrees. In a large mixing bowl combine: cake mix, 1 package of pudding, eggs, club soda, oil and nuts. Blend well, then beat at medium speed for 4 minutes.Pour batter into a greased and floured 10-inch tube pan. Bake 55 - 60 minutes or until tester inserted comes out clean and cake begins to pull away from sides. Let cool in pan 15 minutes. While cake is baking, pour milk into a deep, narrow-bottom mixing bowl; add whipped topping mix and 1 package of pudding mix. Beat at low speed until well blended, gradually increase beating speed to high and whip until mixture forms soft peaks, about 4 - 6 minutes. Refrigerate.When cake is completely cooled, remove from pan to wire rack. Split cake in to 3 layers. Spread about 1 cup of frosting over two of the layers; stack and top with third layer. Spread remaining frosting over cake. Garnish with cherries, cut and arranged to resemble shamrocks.
