Jae, in Central Ok. was asking for a Fruitcake Cookie
recipe, and this
is the one we like so well. A dear elderly friend, who is
now deceased
gave it to me many years ago.
Christmas Rock Cookies
3 eggs
1-1/2 cups brown sugar, packed
1 cup butter
2-1/2 cups flour, divided
1 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
1/2 pound candied cherries
2 pounds dates
4 slices candied pineapple
1/2 pound almonds
1 pound brazil nuts
1 pound walnuts
Coarsely cut up fruits and nuts; mix with 1/2 cup of the
flour. Cream eggs, butter and brown sugar. Add 2 cups flour,
cinnamon, soda and salt to the creamed mixture and mix in
thoroughly. Add fruit and nuts. Drop
dough by teaspoon onto greased cooky sheets. Bake at 350º
for 12 to 15 minutes. These are so crunchy and wonderful,
and as you can see are mostly fruits and nuts. They are
eating miniature bites of fruitcake
without all the citron and peels.
