Good Morning Nancy,
I'm glad you had a break with your family, recharging the
batteries every now and then is good for you.
This recipe was sent to me by my good friend Sue in NC, she
thought it was something I would like. I do and am sure lots
of others will too.
Corn Salad Recipe
2 cans yellow corn (drained)
1 medium chopped onion
1 cup chopped green pepper
1 large bunch of cilantro chopped
1 cup mayonnaise
2 cups shredded cheese
1 bag of chili cheese corn chips
A dash of the following spices:
ground mustard
garlic salt
garlic powder
black pepper
chili powder
Mix everything in bowl together except corn chips.
Refrigerate for 2 hours or up to overnight. Add crushed corn
chips before serving.
Enjoy!!
