Here's another TNT 8 inch square cake, and it is also from
the 70's.
Fudge Cake
1 1/4 cups all purpose flour
1 1/3 cups granulated sugar
1 1/4 teaspoon baking powder
1/4 teaspoon soda
1/2 teaspoon salt
3 tablespoons oleo, softened
1 cup milk
1/2 teaspoon vanilla
1 egg
6 tablespoons cocoa
2/3 cups chopped pecans
Heat oven to 350 degrees. Grease and flour (or spray) an 8
inch square pan. Cream the sugar, oleo, cocoa, and then add
the dry ingredients. Add the milk and vanilla. Beat 2
minutes. Stir in chopped pecans. Pour into baking dish. Bake
35- 40 minutes.
Frosting
Mix.
1 cup powdered sugar
3 tablespoons cocoa
2 tablespoons water
1 tablespoon oleo
Heat water and oleo until oleo is melted.
Pour hot water/oleo over the powdered sugar/cocoa. Add 1
teaspoon vanilla.
Frost the slightly cooled Fudge Cake.
