Grilled Portobello Mushrooms

4 fresh portobello mushrooms.
2 Tablespoon olive oil
2 medium sweet onions
4 tomatoes, halved
1/2 teaspoon salt
1 teaspoon pepper
3 tablespoons balsamic vinaigrette dressing
2 tablespoons fresh oregano, chopped
2 ounces fresh mozzarella cheese, cut into small pieces

Remove stems from mushrooms. Rinse mushroom caps; and dry well with paper towels. Cut onions into 1/2 inch crosswise slices. Brush both sides of mushroom and onions with olive oil. Sprinkle the mushrooms, onions and tomato halves with salt and pepper.

Preheat grill to medium heat. Place mushrooms and onions directly over heat, cover and grill for about 6 or 7 minutes. Remove from gril and add tomatoes to grill. Cover and grill tomatoes for about 1 minute, turning one time. Arrange on platter and drizzle with balsamic vinaigrette. Top with cheese and sprinkle with fresh oregano. Makes 4-6 servings.
