Licorice Lemon Cake
1-3/4 cups flour
2-1/2 tsp. baking powder
1/4 tsp. salt
1 cup sugar
3/4 cup milk
1/2 cup soft butter
2 eggs
1 tbsp. anise seed
1 tbsp. grated lemon rind
1 tsp. vanilla
1 tsp. lemon extract
Put first four ingredients in bowl for electric mixer. Add
remaining other ingredients. Beat for 2 minutes on low
speed. Put batter into well greased and lightly floured 9
inch square pan on the bottom. Bake 375º for 30 minutes, or
until toothpick comes out clean when inserted in the center.
Cook and frost with Lemon Butter Frosting.
Lemon Butter Frosting
Cream together well:
1/4 cup butter
2 tbsp. milk
1 tsp. lemon rind
1 tbsp. lemon juice
1/4 tsp. vanilla
1/8 tsp. salt
2 cups powdered sugar
Note: Can thin with a little milk, if necessary.
