Relish Recipe
6 large green peppers (bell peppers)
3 large red peppers " "
1 medium head cabbage
2 large onions peeled
1 gal. green tomatoes
1 qt vinegar
1 cup white sugar
1 cup brown sugar
1 teaspoon cinnamon
1 teaspoon allspice
1/2 cup salt
Chop or grind peppers (after discarding seeds), cabbage,
onions, and tomatoes. Combine all ingredients in large pot
and boil gently for 30 minutes. Ladle into hot sterilized
jars. Seal at once. Process in boiling water bath (212°F)
for 5 minutes. Makes 12 pints.
