Hi all,
Here is a recipe that a friend gave me and I tried it last Sunday morning for breakfast. It is baked in an electric skillet which would make it wonderful to make when it gets hot or when cooking in an RV. It was easy, tasty and keeps quite well.

Electric Skillet Sour Cream Coffee Cake

1 1/2 c flour
1 c sugar
2 t baking powder
1/2 t baking soda
1/4 t salt
1 t nutmeg or cinnamon or combination
1 c sour cream
2 eggs
1/2 c chopped nuts (optional)

In a mixing bowl, stir the above ingredients until creamy. Heat an electric skillet to 280 degrees. Spray with Pam. When the light goes out, pour batter in pan, cover (close vent if you have one) Bake 25 minutes.

Topping:
1/2 c brown sugar
1 t cinnamon
2 T melted butter
2 T flour
1 t nutmeg
1/2 c chopped nuts

Mix, sprinkle over top of cake after it has baked. Turn off the electric skillet. Cover and let stand 10 minutes.

My electric skillet is probably 10 inches square. You might have a thinner coffee cake and have to adjust time if your pan is larger.

Has anyone else found recipes for baking cakes, biscuits, etc. in their electric skillet? I would be interested to give others a try. I prefer using an electric skillet to the stove/oven in my RV. Propane is way too expensive and most sites have electric hookups.
