Square Dance Nut Cake

1-2/3 cups flour
1 cup sugar
2 tsp. baking powder
1/4 tsp. salt
1/4 cup soft butter
1/4 cup shortening
3/4 cup milk
3 unbeaten egg whites
1/2 tsp. vanilla
1/4 tsp. lemon extract
1/2 cup walnuts, chopped

Put first four ingredients into bowl of an electric mixer. Add butter, shortening and milk. Beat on low speed for 1-1/2 minutes. Add egg whites and extracts. Beat another 1-1/2 minutes on low. Stir in chopped nuts.

Turn batter into a 8 inch square pan, well greased and lightly floured on the bottom. Bake at 350º for about 40 minutes, or till toothpick comes out clean, when inserted near the middle. Cool thoroughly. Cut cake into four squares. Frost two cake squares with the white frosting and two with chocolate frosting. Arrange checkerboard fashion, and decorate with additional chopped nuts on the sides of cake, putting a few on top in the middle. A wonderful tasty quick-mix cake.

Checkerboard Frosting
Blend together 2-1/2 cups powdered sugar, 2 tbsp. melted butter and 1 tbsp. warm milk. Stir in *1 egg yolk and 1/2 tsp. vanilla. Beat until spreading consistency, adding 1/4 to 1/2 cup additional powdered sugar, if necessary. Add 1 square melted unsweetened chocolate to one-third of the frosting; gradually stir in 1 to 3 tbsp. milk until spreading consistency.

*Note: I haven't made this cake in a very long time. When I use to make it, there wasn't a warning about raw eggs, so you may want to use a egg substitute, or just omit?
