Microwave Fillet of Sole Almondine

1/2 c. slivered almonds
1/2 c. butter or margarine
1 lb. fresh or frozen fillet of sole
1/2 tsp. salt
1/8 tsp. pepper
1 tsp. chopped parsley
1 Tbsp. lemon juice

Place almonds and butter in 8-inch square baking dish.

Cook, uncovered, for about 5 minutes or until almonds and butter are golden brown. Remove almonds with slotted spoon and set aside. Arrange sole in dish with butter, turning to coat both sides of fish. Sprinkle with salt, pepper, parsley and juice. Cook, covered, with waxed paper or plastic wrap for 4 minutes. Remove waxed paper. Sprinkle fish with toasted almonds. Cook, covered, 1 minute or until fish flakes easily with fork. Let stand one to two minutes before serving.

Garnish with lemon wedges and sprigs of parsley. (I use this recipe for any white fish.)
Serves 8.
