Stir Fried Turkey with Almonds
1 (1 lb.) pkg. turkey breast slices
1 egg white, slightly beaten
1 Tbsp. cornstarch
1/2 tsp. salt
1/2 tsp. sugar
6 Tbsp. vegetable oil
2 c. (1/2-inch) diagonal
slices unpeeled zucchini
3/4 c. whole blanched almonds
1/2 red bell pepper, thinly sliced
4 thin slices fresh ginger root
4 cloves garlic
2 Tbsp. dry sherry
1 1/2 Tbsp. soy sauce
toasted sesame seeds
Thaw turkey slices in refrigerator if frozen; cut slices into 3/4 x 2-inch
strips. Combine turkey with egg white, cornstarch, salt and sugar. Refrigerate,
covered, at least 30 minutes. Stir-fry turkey strips in 3 tablespoons oil over
medium high heat until turkey turns white, 1 to 2 minutes; remove from pan. Heat
1 tablespoon oil; stir-fry zucchini
until crisp-tender, about 1 minute. Tip zucchini onto plate, cover. Heat 1
tablespoon oil; stir-fry almonds and red pepper strips until almonds are golden
brown, about 1 minute.
Add almonds to zucchini. Heat 1 tablespoon oil; stir-fry ginger and garlic 1
minute; remove and discard. Add turkey, sherry and soy sauce to garlic flavored
oil, stir-fry over medium heat about 30 seconds. Add zucchini, red pepper and
almonds.
Stir-fry until heated through. Spoon onto heated serving platter; sprinkle with
sesame seed.
Makes 4 servings..
