Cabbage Apple Jell-O Salad
2 (3 ounce) or 1 (6 ounce) package lime Jell-O
1 cup boiling water
1 (8 ounce) can crushed pineapple, drained
Cold water
1/2 cup chopped apples
1/4 cup mayonnaise
1 cup finely chopped cabbage
Dissolve gelatin in boiling water. Drain pineapple, reserving juice. Add enough
water to juice to make 1 1/2 cups liquid. Stir into dissolved gelatin. Chill
until slightly thickened. Measure 1 1/2 cups thickened gelatin into a separate
bowl. Stir in pineapple and apple. Pour into 6-cup mold; chill just until set.
Combine mayonnaise and cabbage with remaining thickened gelatin. Pour into mold
over set gelatin. Chill until firm. Unmold and garnish as desired.
Makes 6-8 servings.
