Beet and Celery Salad

1 lb. can diced beets, reserve juice
1 pkg. lemon Jello, dissolved in 1 c. hot beet juice

Add: 3/4 c. pineapple juice
2 tbsp. lemon juice or cider vinegar
1 tbsp. grated onion
1-2 tbsp. prepared horseradish
1 tsp. salt
1/8 tsp. pepper

Chill until thickened. Mix in 2 cups beet and 1 cup celery, chopped. Chill until firm.
