Beet and Orange Jello Salad
1 pkg. orange Jello (sugar free)
1 (8 oz.) can sliced beets, reserve
juice
1 tbsp. lemon juice
1 tsp. vinegar
1 tsp. mustard seeds
Prepare Jello with only 1 cup boiling
water. Add juice from beets. Stir in
lemon juice, vinegar and mustard seeds.
Arrange sliced beets in bottom of 1
quart mold. Pour Jello mixture over
beets and refrigerate overnight. Unmold
on bed of lettuce. Serve with choice of
salad dressing.
