Beet Soup
2 cans beets or 6 medium fresh beets
1 1/2 qt. water
salt to taste
3-4 Tbsp. vinegar
If using fresh beets wash tops very
good. Chop leaves and stems. Dice the
beets like an onion. Add water and cook
beets. Add salt. When beets are cooked
take broth from pot and put in bowl. Add
small container sour cream. Put back
into pot with beets. Cook on very low
heat; add vinegar and taste. If needed
add more salt and vinegar to taste.
