Carrot and Beet Salad

1 c. grated raw carrots
1 c. celery, chopped
1/2 c. cooked cold beets, chopped fine
1/4 green pepper, chopped (optional)

Toss ingredients together with fork. Add mayonnaise to moisten. Chill. Serve on bed of lettuce. Top with mayonnaise and dash of paprika.
